What makes guacamole molcajete special? The process of crushing the ingredients releases all the flavors and oils to maximize the flavor while creating a smooth consistency you just can’t get from a fork.

How To Make Molcajete Guacamole
With just a few ingredients and a little effort, you’ll create a creamy and flavorful guacamole that’s perfect for tacos, or chip dipping.
Step 1 – To make, mash together the onions, jalapeños, garlic and salt to release the flavor.

Step 2 – Scoop the flesh of the avocados into the molcajete and gently smash with the pestle, while also incorporating the onion/garlic paste.

Step 3 – Finally, use a spoon to fold in the diced cilantro and fresh lime juice.

Tips For Making Guacamole in Molcajete
- I find 1/8 tsp of salt per avocado is the sweet spot. If you’re sensitive to salt, add half the amount and work your way up.
- Fresh lime juice is far superior to bottled lime juice. Try not to substitute bottled juice in.
- What size molcajete for guacamole? I recommend using a 4 cup molcajete for guacamole. You can get away with a 2 cup molcajete if you half the batch.

Ingredients
- 2 tbsp finely diced white onion
- 1-2 tbsp finely diced jalapeno pepper (*Note 1)
- 1 clove garlic, minced
- ½-¾ tsp salt, + more to taste (*Note 2)
- 3 ripe avocados
- 1 lime, juiced
- 1 tbsp diced cilantro
Instructions

Add the onion, jalapeños, garlic, and salt to the molcajete and use the pestle to grind into a paste.

Add the flesh of the avocados to the molcajete and use the pestle to mash and mix into the onion/garlic paste.

Add the lime juice and cilantro and use a large spoon to fold into the guacamole.

Taste and adjust ingredients to suit your preference. Serve immediately for best flavor and texture.
Notes
Note 2 – Salt level will depend on what you’re serving the guacamole with. Some tortilla chips are super salty so you don’t need as much salt in the guacamole. I start with 1/2 tsp and go up from there.
