If you’re looking for an easy afternoon snack for kids that also pack a nutritional punch then you need to try these Chocolate Quinoa Bites.
Made with just two ingredients, they’re so simple to throw together. No cooking required!

This is the Puffed Quinoa which I use in my recipe. It comes in a massive bag but is the best value Puffed Quinoa that I’ve found. You could always go halves with a friend!
You should be able to find Puffed Quinoa in health food shops too.

The first step is to melt chocolate. You can use milk chocolate, dark chocolate or a mixture of both.
Melt the chocolate in a large bowl, either in the microwave or over a pan of boiling water on the hob.
If melting in the microwave, just be careful that the chocolate doesn’t burn. Check it every 10 seconds or so.

Once the chocolate has melted, add in the puffed quinoa and mix well.
Line a baking tray with parchment paper then take a tablespoon of the mixture at a time and add to the baking tray, in a round cluster shape.

You should be able to make about 22 bites from the mixture.
Pop in the fridge for 30 minutes to firm up and then they’re ready to enjoy!

These Quinoa Bites will keep in the fridge for up to 5 days. Brilliant to pull out for a quick after school snack for the kids.
I serve them with some berries for some extra goodness!
