How to Make Chicken Parm Meatloaf Muffins

Step 1. Add all of your ingredients to a large bowl, including some chili flakes if you like a kick of heat.

Step 2. Use your hands to really mix it all up until fully incorporated.

Step 3. Using a cookie scoop or large spoon, evenly split the meatloaf mixture into a prepared muffin tin.

Step 4. Spread marinara sauce over the top of each, and then sprinkle some additional parmesan cheese. Toss in the oven at 350 for around 15 minutes.

Pre-heat oven to 350 degrees. Spray a muffin pan with non-stick spray and set aside.

In a large bowl, combine first 9 ingredients (ground chicken through red pepper flakes) and mix well. Divide mixture evenly between 12 muffin cups.
2 pounds ground chicken, 1/3 cup grated parmigiano reggiano, 2 sundried tomatoes packed in oil, 1/4 cup minced parsley, 2 cloves garlic, 2 teaspoons oregano, 2 teaspoons salt, 1 teaspoon pepper, 1/2 teaspoon red pepper flakes

Using a small brush or spoon, spread marinara evenly on all muffin cups then sprinkle each with grated cheese. Bake for 15-18 minutes. Serve immediately.
