Blend plant protein, strawberries, plant milk, maple syrup, vanilla bean paste and salt until smooth. Add to a bowl with with rolled oats, freeze dried strawberries and chia seeds and stir to incorporate. Transfer into a jar and allow to set for 2 hours or overnight.

When ready to serve, melt dairy free white chocolate, sift in matcha powder and stir to combine. Pour on top of oats and return to the fridge until chocolate is set, then crack and enjoy!
