- Shrimp. Jumbo or king prawns are best here. tails on or off.
- Olive oil. Or any other oil of your choice.
- Paprika. any colour. I like red because it’s sweet and makes a nice combination with green jalapeno.
- Jalapeno peppers.
- Onion. White, yellow or red.
- Spices. Chili powder, cumin, garlic powder, paprika, oregano, salt and black pepper.
- lime juice. Lime is way better than lemon in this recipe.
- Coriander. For garnish.
How to make shrimp fajitas
1. Make the spice mix. In a small bowl, mix together the chili powder, cumin, paprika powder, garlic powder, oregano, salt, and pepper.

2. Prepare shrimp. Pat the shrimp dry with a paper towel, trying to get as much moisture out as possible. Place the shrimp in a bowl and cover with the spices.

3. Fry the vegetables. Pour 1 ½ tablespoons olive oil into a large skillet and add peppers, jalapenos, and onions. Cook over high heat until chars appear, about 4-5 minutes. Season with salt and remove from the pan.

4. Fry the shrimp. In the same pan, add the remaining 1.5 tablespoons olive oil. Arrange the shrimp in a single layer and sear over high heat for a minute or two on each side. Work in two batches if necessary, just to make sure you don’t overfill the pan.

5. Surcharge. To serve, add the vegetables to the pan with the shrimp. Heat for a minute or until the vegetables are hot again. Drizzle with lime juice and sprinkle with coriander. Serve with warm tortillas, sour cream, guacamole and a mix of shredded Mexican cheese.

- Pre-mix the spices. To get an even distribution of all the spices, mix them together before adding to the shrimp.
