Perfectly crispy potatoes tossed with onion, turkey bacon, in a blend of savory spices and herbs. Great side dish for breakfast or dinner!

This recipe is made up of only a few simple ingredients, but the flavor is bold and delicious! If you are looking for a new side dish for your next dinner, breakfast or brunch, these Roasted Potatoes with Bacon are perfect.
Crispy on the outside, tender on the inside, you won’t be able to get enough.
- 1 ½ lb bag of baby potatoes
- 8-10 slices of turkey bacon (or preferred)
- ½ red onion
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- dash of salt & pepper
- 3 tablespoon olive oil
- desired amount of fresh parsley

Begin by slicing your potatoes into quarters. Place in a large pot with water and bring to a boil. Cook for approximately 8-10 minutes, or until a fork can easily puncture the potatoes. Try not overcook them, since we will still be roasting them in the oven.

While the potatoes are boiling, chop your onions and bacon. Combine them in a skillet and sauce until onion is tender and bacon has started to brown.

In a large bowl, combine the precooked potatoes, bacon and onions. Drizzle with olive oil, then top with the garlic powder and paprika. Toss well.

Spread the ingredients on a large baking sheet. Bake at 400 degrees F. for approximately 15-20 minutes, or until the potatoes and bacon are browned and crispy.
Remove from oven and top with a dash of salt, pepper and desired amount of fresh parsley.
