You know I love pancakes (that’s why I have over 15 pancake recipes on my blog!) but I didn’t know there were more amazing ways to make pancakes until now. I can present to you: Vegan Banana Pancake Bites!

They are banana slices dipped in pancake batter and they are so good! If you love bananas, you will go crazy for them. Taste-wise, they are very similar to my vegan banana fritters – banana in the middle, surrounded by fluffy batter, but definitely with a lot less oil.

And while these vegan banana pancake bites are delicious enough to eat as is, they’re even more delicious Hazelnut Caramel Sauce, for which you only need hazelnut butter, maple syrup and water. I am obsessed with this sweet dip.

How to Make Banana Pancake Bites

You’ll only need 6 ingredients for these easy banana pancake bites:

  • a banana
  • Flour – I’m using all-purpose wheat flour
  • Baking powder
  • Plant-based milks – like rice milk, almond milk, soy milk, oat milk, whatever you have at home!
  • Maple Syrup – You can also use rice syrup
  • Oils – I’m using canola oil which is vegan buttery (yummy!) – you can also use any neutral, plant-based oil like sunflower, coconut oil, …

I’ve found medium to high heat (setting 6 out of 9) to be the magic temperature for making pancakes, but it depends a bit on the stovetop and pan.

I also made a hazelnut caramel sauce that is absolutely divine! Just mix together hazelnut butter (made from 100% roasted hazelnuts), maple syrup and water.

Ingredients for Hazelnut Caramel Sauce

  • In a bowl, mix all-purpose flour and baking powder. Add vegan milk, oil and maple syrup. Stir until combined, try not to overmix.

  • Cut a peeled banana into slices (about 18 slices).

  • Spray a flat pan or frying pan with oil and heat over medium heat. Dip the banana pieces in the batter and cook until the battered banana pieces turn golden. You will see that the corners will set and then you can flip them over and cook the other side as well. Work in 2-3 batches so you have enough room to flip the pancake bites.

  • For the hazelnut caramel sauce, whisk together the hazelnut butter, maple syrup and water. Perfect for dipping or drizzling over banana pancake bites!
