Ingredients – what you need
Below are the ingredients you will need for this recipe!

oranges: The star of the show! You can use any type of orange you like. I made a mix of blood orange and navy.
Avocado: for a touch of creamy texture!
walnuts: to add a little texture and crunch. You can also use toasted hazelnuts or pecans!
Kale: I used organic baby kale leaves, but you can use spinach, arugula, or mixed leafy greens too.
Red onion: for that little extra portion of taste!
Let’s make the citrus vinaigrette
For the vinaigrette, you’ll need a handful of pantry ingredients, plus some extra citrus for a splash of flavor. Here’s everything you need – Dijon mustard, half an orange, olive oil, citrus vinegar, garlic powder and salt & pepper.
The first step in making this salad – mix the ingredients for the dressing! In a small mason jar or glass bowl, whisk together the dressing ingredients (or shake in a jar with a lid) and season with salt and black pepper to taste.
Next – drizzle the vinaigrette over the salad and serve!
Tips for success & recipe variations
salad variations – Some additional vegetables that you can add to the salad to change the flavor would be fennel, pomegranate seeds, dried cranberries or dried cherries, or fresh herbs like oregano or basil. Instead of walnuts, you can use chopped and toasted hazelnuts, pecans, or almonds.
dressing options – If you can’t find citrus champagne vinaigrette at your local store, I recommend white balsamic vinegar instead! Both are light and perfect with the citrus flavors.
Types of kale to use – For the base of the salad, I used baby cabbage, which is softer in texture and fairly mild in flavor. You can also use Tuscan kale or regular kale – if you’re not a kale fan, you can use spinach, arugula, or mixed leafy greens instead!
Types of citrus to be used – I used a mix of navy and blood oranges for this salad! They are super sweet and extra juicy. If you want to add a hint of grapefruit that’s a little tart and sweet – that works great too!
