I’m a crazy multitasker. Isn’t that all mothers? That being said, I love a good multitasking dessert. 🙂

These Skinny Granola Cookie Wedges taste like a chocolate chip cookie but has the shape of a cake, but also tastes like muesli AND is low in calories at the same time! See?? Perfect multitasker! And they only use ONE bowl.

And how can you not like such a dessert?! Honestly, this is one of the best low calorie desserts I’ve ever had. It’s rich, decadent, and hits the spot with a single wedge. My boys loved it! They also freeze and chill well.

It’s really easy to do. Here’s what you need to do:

  1. Combine the brown sugar, oil, butter, vanilla, salt, baking powder, and egg white in a bowl.
  2. Add four oats, nuts, and chocolate chips and stir to combine.
  3. Pour into a 9 inch cake pan and bake at 350 degrees for 13 minutes.
  4. You’re done! Cut into 8 slices and enjoy!

One bowl and simple ingredients plus only 168 calories per slice!

  • Preheat oven to 350 degrees F. In a large mixing bowl, combine brown sugar, oil, butter, vanilla, salt, baking powder, and egg. Stir until everything is well mixed.

  • Weigh or lightly spoon flour into measuring cup; level with a knife. Add flour, rolled oats, nuts and chocolate chips to sugar mixture. Stir until just combined.

  • Scrape the batter into a 9-inch glass pie plate coated with cooking spray and spread around the edges with a spatula. Bake at 350 degrees for 13 minutes or until set.

  • Cool slightly on a wire rack. Cut into 8 wedges and ENJOY!!
