Layered with eggs, cheese and sourdough bread, this make ahead Easy Cheesy Strata is perfect for entertaining or meal-prep for the week!

One meal I know my entire family will devour is Strata. When in doubt, I usually opt for my Mexican Cornbread Strata, but this Easy Cheesy Strata is our new favorite. It’s perfect for breakfast, brunch, dinner.
WHAT IS STRATA?
Strata is traditionally an egg & bread casserole that’s baked. They can be made with a variety of ingredients including meats, cheeses, and vegetables. The bread and fillings are layered with the egg mixture poured over top.
Whether you are cooking for a small family or for a large gathering, it’s the ultimate “casserole” everyone will love.

WHAT INGREDIENTS DO I NEED?
- 10 eggs
- 6 cups cubed sourdough bread (or preferred)
- 2 cups milk
- ½ red onion
- 2 tablespoon olive oil
- ⅓ cup shredded cheddar cheese
- ⅓ cup shredded mozzarella
- 1 teaspoon dried thyme
- dash of salt & pepper
- parsley

HOW DO I MAKE EASY CHEESY STRATA?
In a skillet, begin to sauté red onion and olive oil until tender. Once they are soft, remove from heat and set aside.
In a separate bowl, whisk together eggs, milk, thyme and salt & pepper.

Grease a large/deep baking dish. Layer half of the cubed bread on the bottom, followed by half of the red onion, ½ of the shredded cheese, and ½ of the egg mixture.
Continue layering with the remaining ingredients. Cover and dish and place in your refrigerator for 6 hrs, up to overnight.

When you are ready to bake, remove your pan from the refrigerator and let it sit while your oven warms up to 375 degrees F.
Bake, uncovered, for approximately 50-60 minutes, or until the eggs are cooked and the top is golden brown. Remove from oven and garnish with fresh parsley.
