Everyone has their “favourite” way of hard-boiling eggs. Use whichever method you prefer – they all work beautifully. Some recipes require raw eggs to be placed directly in the smoker, but we find that this results in dry eggs that take forever to cook.

Not including the time it takes to cook the eggs, it takes 30-60 minutes from start to finish. Including the time it takes to boil the eggs on the stove, the time span is 45-75 minutes.

How long do devil eggs keep?
Once prepared, smoked deviled eggs will keep in the refrigerator for two to three days, but the quality will deteriorate quickly.

Hard boil the eggs

Bring a large pot of water to a gentle boil. Poke a hole in the bottom of each egg with a thumbtack before placing in the boiling water. Cook for 11 minutes.

Fill a large bowl with ice water. Add the boiled eggs to the bowl once they are done cooking. Leave to rest for 10 minutes before peeling.
Smoke the eggs

Preheat the smoker to 175°F and load with your choice of wood or pellets.

Place the shelled eggs directly on the grill and smoke for 30-60 minutes.

Remove the eggs from the grill and cut in half lengthways. Carefully remove the yolks and place in a medium mixing bowl.

Add mayonnaise, relish, mustard, and salt and stir to combine. Taste and season as needed.

Using a spoon or piping bag, fill each egg white with the yolk mixture.

Garnish with a pinch of paprika and fresh dill. Serve immediately for best texture and flavor.
