Korean Style Lamb Chops – Nicky’s Kitchen Sanctuary

These Korean-Style Lamb Chops are slightly spicy and absolutely delicious – marinate them for a few hours for extra flavor!

Have you tried gochujang yet?

I like to use it when making my Spicy Pork Ramen, Korean Beef Bulgogi Bowl, Korean Steak Sandwich and also as a dip for veggie bibimbap.

It is a Korean sauce or paste with a smoky, sweet and spicy taste. Some brands are hotter than others. I’ve been using the paste (instead of the sauce) a lot lately – it was a bit fun, but the kids will still eat as long as they take a big gulp of water!

For this recipe, the gochujang is used as part of a marinade, which adds so much flavor! You don’t even have to marinate the Korean-style lamb chops for too long.

I marinated it for 30 minutes and it tasted great! and I marinated for up to 6 hours – that was a little more intense flavor and the meat was a little more tender too. However, if I was in a rush, I would walk 30 minutes without hesitation.

  • Lamb chops – You can buy them individually or use a French rack of lamb and cut it into individual cutlets.

👩‍🍳PRO TIP Do not cook these chops over high heat as the sugar in the marinade can cause them to burn. A nice medium heat is perfect.

🍽️ What to serve it with


I was planning on saving a few of these for shredding so I could add them to some fried rice later in the week, but no. They were all gone and we all had orange fingers and faces.

We may have started with knives and forks, but since these Korean-style lamb chops are quite small, I think it’s best to just go for it.

I managed 4, he mocked 5 and the kids had 2 each. A good portion size is probably 3 pieces, but we’re a little greedy…

INSTRUCTIONS

  • In a large bowl, add gochujang paste, rice wine vinegar, sugar, soy sauce, mirin, ginger, garlic and sesame oil. Mix everything together, then add the lamb chops and mix again until well coated. Cover the bowl with cling film.

    12 lamb chops, 100 g (½ cup) gochujang paste, 2 tbsp rice wine vinegar, 1 tbsp light brown sugar, 3 tablespoons dark soy sauce, 2 tbsp mirin, 2 teaspoons chopped ginger, 2 cloves of garlic, 1 tbsp sesame oil

  • Place in the fridge to marinate for 2 hours (or up to 12 hours). If you’re short on time, marinating for 30-45 minutes will still taste great.

  • Take the schnitzel out of the fridge 30 minutes before you cook it so it’s not freezer cold.

  • Heat the oil in a large skillet (skillet) and sear the chops over medium-high heat, 3-4 minutes on each side, until golden. You may need to cook in two batches. In this case, you can keep the first portion warm in a low oven.

    1 tbsp neutral cooking oil

  • Before serving, sprinkle with sesame seeds, scallions, and shichimi togarashi. I like to serve them with a large green salad.

    1 tbsp mixed white and black sesame seeds 1 tsp Shichimi Togarashi 4 chopped spring onions (scallions)
