This white chocolate strawberry muffin recipe uses all the typical muffin suspects. There are three things that make this recipe special.
- Fresh strawberries
- lemon juice
- White chocolate chips
I used fresh strawberries and this is not ideal for all seasons. If you must use frozen strawberries, this still works!
If using frozen strawberries, use the same amount, soften in the microwave, then drain the excess liquid (as much as possible). Then carry on as if they were fresh. That means you keep brushing them with flour.

How to prepare the strawberries
I have a little trick for you. Working with fresh fruit when baking doesn’t always work out well. Sometimes the fruit is too heavy for the dough and falls to the ground.
Oh! I found a way to avoid this problem.
So for this recipe, cut the fresh strawberries into small cubes and put them in a bowl. In the same bowl, add 2 teaspoons of flour and mix. Lightly flouring the strawberries absorbs some of their moisture. This keeps the strawberries spread throughout the batter!

Ingredients
- 1 and 1/2 cups Fresh strawberries rolled
- 1 and 1/2 cups all purpose flour
- 2 teaspoon all purpose flour
- 1/2 Cup Sugar
- 1 teaspoon baking powder
- 1 teaspoon baking powder
- 1/8 teaspoon Salt
- 1/4 Cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 egg
- 1/3 Cup milk
- 1/4 Cup White chocolate chips
instructions

Preheat the oven to 400 degrees Fahrenheit. Spray a muffin tin vigorously with nonstick spray.

Wash and dice the strawberries. Pour into a small bowl. Brush with 2 teaspoons of flour.

In a bowl, combine: 1 1/2 cups flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the oil, vanilla extract, lemon juice, egg, and milk.

Add the wet mixture to the bowl along with the dry mixture.

Carefully add strawberries and white chocolate chips. Don’t mix too much.

Divide the mixture evenly in the muffin tin. Top with more strawberries and white chocolate chips, if you like. Cook for 17-20 minutes. Enjoy!
