Dairy Free Chai Popsicles – Lexi’s Clean Kitchen

This 4 ingredient chai popsicle are one of my favorite summer treats! They’re easy to make and packed with sweet spices. These popsicles are refined sugar free, dairy free, paleo and so delicious.

Easy and healthy homemade popsicles

Summer is popsicle season. And if you’re a chai fan like me, then these 4-ingredient chai popsicles are for you.

These healthy popsicles are creamy, flavorful and the perfect way to cool off on a hot summer day.

Because what could be nicer than a creamy popsicle that’s packed with flavor and doesn’t contain any refined store-bought sugars?

What are the ingredients in a popsicle?

  • Milk: I use almond milk, but feel free to use whatever milk you have on hand.
  • Honey: My natural sweetener of choice.
  • vanilla extract: Adds warmth and depth of flavor.
  • Chai spice: A perfect blend of cardamom, allspice, cinnamon, cloves and ginger.

How to make popsicles

  • Although you have to wait for the healthy popsicle to freeze, the actual preparation of this recipe is so quick! Mixture: In a blender, combine almond milk, honey, vanilla, and 1 tablespoon of chai spice mix. Mix everything together until smooth, then taste and adjust the spiciness/sweetness as needed.
  • Portion and freeze: Pour the mixture into your popsicle molds, add the popsicles and freeze for at least 5 hours.

What is chai flavor?

Chai Spice is a delicious blend of sweet, warm spices. Ingredients and amounts may vary slightly, but here’s what I used for this recipe:

  • cardamom
  • pimento
  • Cinammon
  • cloves
  • Ginger

Note: For this recipe, prepare a slightly larger amount of chai spice than you will need at the end. BUT you can save the rest and use it for other chai recipes. It will keep in your cupboard for up to a year – assuming the spices you start with are fresh.

How do you make popsicles without ice crystals?

Luckily, the key to avoiding ice crystals in popsicles is to use a creamy base, and that’s exactly what we’re doing with the almond milk in these popsicles.

Also, I recommend keeping the popsicles in the back of the freezer. In the places in the freezer closer to the door, the temperature is more unstable due to the opening and closing of the freezer. These temperature fluctuations can lead to the formation of ice crystals.

tips and hints

  • Allow sufficient time for freezing. I recommend at least 5 hours or overnight to allow the popsicle to freeze completely.
  • The popsicle will separate naturally how they freeze. That is normal! All it does is give them a gorgeous look and full flavor experience with every bite.
  • If you don’t have a popsicle mold, You can use paper cups. However, I recommend a popsicle mold if you can get your hands on one. You’re worth it!

variations

  • Make dirty chai popsicles. Do you like to add espresso to your chai? Try adding some espresso to the blender to boost the flavor and increase the caffeine boost.
  • Use a different milk. I love using almond milk in this recipe, but feel free to use whatever milk you have on hand.
  • Make them vegan. Thanks to the almond milk, these are already dairy-free, but if you want to make these sugar-free popsicles completely vegan, simply swap out the honey for maple syrup.

This is how you easily remove popsicles from the mold

There are a few tricks you can use to pop popsicles out of the molds, but the simplest one I’ve tried so far is to place the popsicle mold in a large bowl of hot water. Place the entire mold in the water, being careful not to get any water inside the popsicle. Leave it in for about 30 seconds and remove. Then all of the popsicles should pop out easily! If you have individual molds, you can stick each popsicle in a tall glass of hot water.

Or you can just run the molds under hot tap water if you can’t fit in a bowl.

How to store it

Unlike popsicles that you buy in the store, we find these popsicles are best consumed after 1 to 2 weeks. The fresher the better.

With proper storage and temperature control, these homemade popsicles will keep in the freezer for up to 3 months.

Remember: the longer they are stored, the higher the risk of ice crystal formation.

Which popsicle shapes are the best?

There are so many fun popsicle shapes on the market these days! You can get silicone, stainless steel or plastic models!

We actually have one of each, but we keep going back to the classic plastic version because it holds up well and we like the shape of a popsicle. Simply hand wash in warm soapy water rather than hot water or the dishwasher. Here are some other favorite popsicle shapes that we like:
