How to make baked oatmeal
There’s something special about talking in the morning – it’s easygoing, relaxed and can start the day off really well. This easy baked oatmeal is what we turn to when there’s more than the two of us in the house. It’s really flexible. Feel free to try the add-ins to our recipe. We love adding strawberries, bananas, and chocolate, but add whatever you like. Or add whatever nuts, raisins, or cranberries you have left in your stash from another recipe. It’s up to you! You can mix all the ingredients together the night before cooking and then bake in the morning. If you do this, place the bananas on the bottom of the bowl and not on top of the oatmeal, as they might brown slightly overnight. A few readers have tried freezing the oatmeal: After mixing everything together, cover the oatmeal tightly or place in resealable plastic bags and freeze for up to a month. Then, when you want to bake the oatmeal, simply take it out of the freezer, thaw, and bake as directed. If you choose to do this, we recommend mixing the fruit in with the oatmeal instead of placing it on top to prevent browning – especially the bananas.

Recipe Substitutions
This baked oatmeal recipe is easy to adapt to a dairy- and egg-free diet. While we call for an egg in the recipe, we’ve managed to eliminate the egg entirely, or you can substitute a flaxseed egg for the egg. Another easy substitution is to substitute soy, almond, or even coconut milk for the milk provided in the original recipe.
Of course you can also change the fruit and chocolate in the recipe. To reduce the calorie count or sweetness, eliminate chocolate from the recipe altogether. You can also substitute blueberries, blackberries, or other fruits for the strawberries and banana
Finally, if you want to reduce the amount of sugar, readers have had success eliminating the sugar entirely. You can do this or substitute honey or agave nectar for the sugar.

Our super simple recipe for Baked Oatmeal with Fresh Strawberries, Bananas and Chocolate is a crowd pleaser. You can make it in the morning or, if you’re short on time, make it the night before and bake it in the morning. Here you can make many substitutions. A few ideas: substitute soy milk for the milk, remove the egg, reduce the sugar a bit, or substitute something you like for the fruit, nuts, and chocolate. 2 cups (175 grams) old-fashioned rolled oats
1/3 cup (70 grams) light brown sugar
1 teaspoon baking powder
1 tablespoon grated orange zest
1 teaspoon Chinese five-spice cinnamon or substitute cinnamon
1/2 teaspoon fine sea salt
1/2 cup (55 grams) walnuts, chopped
6 ounces strawberries, sliced
1/3 cup (60 grams) semi-sweet chocolate chips
2 cups (470 ml) milk, dairy or non-dairy
1 large egg, see instructions for non-egg variant
3 tablespoons butter, melted (substitute melted coconut oil)
2 teaspoons vanilla extract
1 ripe banana, peeled and cut into 1/2 inch slices
directions
- Prepare oatmeal
1Preheat the oven to 375 degrees F. Generously spray the inside of a 2-quart casserole dish with cooking spray and place on a baking sheet. In a large bowl, combine oatmeal, sugar, baking powder, orange zest, five Chinese spices, salt, half the walnuts, half the strawberries, and half the chocolate. Pour into the prepared casserole dish.
2Scatter the remaining strawberries, walnuts, chocolate and banana over the oatmeal. In another large bowl, whisk together the milk, egg, butter, and vanilla extract, then pour over the oatmeal and fruit. Gently rock the casserole dish and shake it to help distribute the milk mixture into the oatmeal.
- Bake oatmeal
1Bake oatmeal until golden brown on top and milk mixture has set, about 35 minutes. For an extra tasty finish, sprinkle about a tablespoon of brown sugar over the oatmeal, then place back in the oven under the grill and grill for 20 to 30 seconds.
Adam and Joanne’s tips
- For gluten-free oatmeal, use certified gluten-free oatmeal.
- For egg-free oatmeal, you can omit the egg altogether. The oatmeal will loosen up a bit as it bakes. You can also replace it with a chia or flaxseed egg.
