ingredients you need
- Brown rice grain – I used this crunchy brown rice granola as the main ingredient in this recipe, but you can use classic Rice Krispies if you prefer
- peanut butter – this replaces traditional marshmallows and holds the bars together. I’ve used creamy peanut butter, but any nut butter will work in these, or even sunflower butter if you have a nut allergy
- Treasure β naturally sweetens these bars without using refined sugar, but you can also use maple syrup if you want to keep them vegan
- vanilla extract + salt β Flavor Boost!
- Food coloring green β this is a must to make them look like Frankenstein! Any type of green food coloring will work
- Creepy Additions β you will need some fun candy eyes, pretzel sticks and black candy melts (regular chocolate chips will work too, but they are more brown than black)
How to Make Frankenstein Rice Krispie Treats
- Mix the wet ingredients. In a medium saucepan over low-medium heat, stir together peanut butter, honey, vanilla, and a pinch of salt until melted and combined. You can also microwave the ingredients in a microwave-safe bowl at 30-second intervals, mixing each time until combined.
- Add rice porridge. Turn off the heat and add a few drops of green food coloring. Whisk until the mixture is the desired shade of green, then add the brown rice granola and mix until combined and the granola is completely coated.
- Let beams set. Transfer the rice and granola mixture to an 8Γ8 baking pan lined with a piece of parchment paper (or nonstick cooking spray) and use a spatula to spread the mixture, pressing down to evenly compress the treats smooth, and pack everything up. Cover the pan and place in the fridge for at least 3 hours until the treats are set. Carefully remove the treats from the pan and cut into 16 bars.
- Decorate! Add Black Candy Melts (or chocolate) to a small bowl and microwave at 30-second intervals, mixing until melted each time. Cut a small slit at the top of a plastic bag or piping bag and add melted candy melts. Slowly pipe the hair and squiggly mouth onto each bar and use the melted chocolate to “glue” the cute eyes onto it. Alternatively, you can dip the tops of the bars into the melted chocolate. Cut the pretzel sticks and place them on either side of the sticks as studs, again using the candy melt as glue. Gently push them into the bars so they stick.
Tips for making Frankenstein treats
- Make sure the peanut butter is well mixed as you want it to be nice and thick to hold the mixture together.
- Use a spatula to mix the crunchy rice granola with the remaining ingredients, which will prevent sticking and help distribute the mixture throughout the pan. Be sure to press down firmly so the mixture packs and holds together once it has set.
- You can easily swap out the peanut butter for any type of nut butter! Some other great options are almond butter, cashew butter, and even sunflower seed butter if you have a nut allergy.
- I find that using parchment paper makes it a lot easier to get the treats out of the pan to cut them evenly, but you can use nonstick spray if that’s all you have.
- You should refrigerate the bars for at least 3 hours (or even overnight) to ensure the bars are firm and firm enough to cut so they don’t fall apart.
- As well as being decorative, the melted candy chocolate acts as the glue that sticks to the eyes and holds the pretzel “studs” to the sides of these bars.
- If you’re making some rice krispie treats (perfect for parties!), feel free to double this recipe and use a 9Γ13 casserole dish.
