Why make another version of the already popular BLT Pasta Salad? Because this recipe got even more delicious when I made it with eggs and jalapenos! I wanted to share it with you right away.
And I can tell you that adding creamy eggs to this pasta salad brings a whole new dimension of flavor. With some tangy jalapenos in the mix, the recipe has become another family favorite.

BLT sandwiches and eggs are a match made in heaven. Ever since I first bit into a warm egg on a crispy hot and cold BLT sandwich, I’ve been hooked on the BLT + egg combo.
The egg in this recipe adds texture and depth to the pasta salad, and the added fat and flavor make it even heartier as a meal. This is a pasta salad that I would love to make every week.

Jalapeno BLT Pasta Salad
- bacon
- Bite-sized noodles
- mayonnaise
- Jalapenos in a jar
- Juice from pickled jalapenos
- Hard boiled eggs
- Cocktail Tomatoes
- romaine lettuce
- Green or red onions
- salt and pepper
- Fresh cilantro or parsley

Start by cooking the bacon in the oven or on the stovetop. Transfer the cooked bacon to a plate lined with paper towels. Allow the bacon to cool completely before shredding or crumbling.
While the bacon is cooking, cook the pasta according to package directions, adding about a generous tablespoon of kosher salt to the water as it cooks. Drain and rinse until the noodles have cooled.
In a large mixing bowl, whisk together the mayonnaise, jalapeno juice, bacon fat (if desired), salt, and pepper. Add the cooled noodles to the bowl and stir until the noodles are coated.
Add the bacon, jalapeno, tomatoes, lettuce, onions, and cilantro. Stir again to mix everything well. Serve immediately or cover and refrigerate until ready to serve.
