Instant Pot Radicchio Risotto (Risotto al Radicchio). Pressure cookers prepare a great risotto quickly and without stirring. This recipe is a red risotto with the bitter notes of radicchio offset by sweet butter and cheese.

My visit to northern Italy inspired me to create this recipe. I reviewed my trip by going through my notes and discovered radicchio risotto in the recipe book I got from Riseria Ferron, the rice factory we visited on my tour.
Radicchio risotto? What a great idea. Bitter risotto balances the creamy rice, sweet butter, and salty cheese in a risotto. And it's colourful! An impressive side dish, this red rice is super easy to make thanks to pressure cooker risotto.
You know pressure cooker risotto, right? It's one of the secret weapons of pressure cookers. You can prepare risotto in minutes without stirring! And it turns out just as creamy as if you'd spent the evening carefully stirring and adding the broth, ladle by ladle.

- Fine sea salt
- Red radicchio
- Arborio Rice (or Carnaroli or Vialone Nano Rice)
- red wine
- Vegetable broth or chicken broth (homemade or store-bought low-sodium broth)
- butter
- Grated parmesan cheese

How to make instant radicchio risotto
Fry the onion, garlic and radicchio
Heat 2 tablespoons olive oil in an Instant Pot on sauté mode on high until oil begins to shimmer (medium-high heat in a pressure cooker). Add onion and garlic, sprinkle with ½ teaspoon salt and sauté until onion softens, about 3 minutes. Stir in the sliced radicchio and sauté until wilted, about 2 minutes.
Add rice, wine and broth
Stir in the rice and brush with the oil. Add the wine and scrape the bottom of the pan with a flat wooden spoon to loosen any browned pieces of onion. Bring the wine to a boil, pour in the stock, stir in 1/2 teaspoon of salt (if using homemade stock) and secure the lid.
Pressure cook the risotto with the quick release for 5 minutes
Cook on high pressure in an Instant Pot, electric pressure cooker, or pressure cooker for 5 minutes. (Use manual mode or pressure cooker for an instant pot). Release the pressure quickly, then carefully remove the lid and tilt it away from you to avoid the scalding steam.
Stir in the butter and cheese and serve
Stir in the 2 tablespoons of butter until the rice melts, then stir in the shredded cheese. Sprinkle with some grated cheese and chopped radicchio and serve. Enjoy!
substitutions
- What type of rice should I use? Traditional risotto rice is short-grain rice grown to contain extra starch: Arborio, Carnaroli, or Vialone Nano. (Vialone nano is the specialty at Riseria Ferron.) Arborio is by far the easiest for me to find in my local grocery stores and works well in risotto. So don't worry if you can't find a fancier risotto rice. If you can't find risotto rice, you can try another type of short grain rice. However, it doesn't contain that much starch, so the risotto won't be as creamy.
- Vegetarian: This recipe is vegetarian if you use the vegetable broth listed in the ingredients.
- Vegan: To make this recipe vegan, you need to substitute the dairy products. I've read that you can substitute vegan butter and vegan parmesan cheese in risotto, but I've never tried them. If you're vegan and making this recipe using vegan alternatives, let me know how it went in the comments section below!
- No alcohol: Most of the alcohol will evaporate during the simmer, but not all. To cook non-alcoholic, substitute additional broth for the red wine.
What is radicchio?
Radicchio is a bitter, red leafy vegetable related to chicory and has been popular in Italian cuisine for centuries. They are naturally green when ripe, but they get their beautiful red color from a technique called "imbianchimento" developed by a Belgian agronomist in the 19th century. The radicchio is harvested and stored in water in a dark shed, which stops chlorophyll production, leaving the radicchio red.

This recipe easily doubles in a 6 quart pressure cooker. Cut all the ingredients in half and this recipe fits in a 3 liter pressure cooker. The cooking time does not change; It takes the same amount of time to cook each grain of rice no matter how much you put in the pot.
storage
According to the USDA, leftover rice has a shelf life of three days in the refrigerator or three months in the freezer, provided it is refrigerated (or frozen) in an airtight container within an hour of cooking and properly heated before eating. I portion my risotto into 2-cup containers before placing in the fridge or freezer. Be sure to fully reheat the risotto; An instant-read thermometer should read 165°F in the middle of the rice.
Tips and Tricks
- Pressure cooking is key to an easy risotto. No need to stir for 30 minutes by gently pouring the broth into the pot. I can secure the lid of my Instant Pot, let it cook for 5 minutes and I have an amazing risotto without all the extra work.
- Next to the risotto rice, the broth is the second most important ingredient. If you have an Instant Pot or other pressure cooker, please try making your own Homemade Pressure Cooker Vegetable Broth or Homemade Pressure Cooker Chicken Broth for this recipe. You will be able to taste the difference in your last risotto.
What to serve with Instant Pot radicchio risotto
This risotto is hearty enough to serve as a vegetarian main course, but also makes a great hearty, starchy side dish. I love serving it with seafood like fish fillets or grilled shrimp skewers.
