The ingredient list for these healthy blueberry muffins is simple, nutritious, and uses ingredients you probably already have in your kitchen.

  • White Whole Wheat Flour: Be sure to use white whole wheat flour instead of regular whole wheat flour as it is lighter and more suitable for baking.
  • Blueberries (fresh or frozen).): Fresh or frozen blueberries work well for this recipe.
  • eggs: Eggs are used as a binder and also make this blueberry muffin recipe fluffy.
  • Honey: Honey is an all-natural sweetener that goes really well with blueberries.
  • Greek yogurt: Greek Yogurt is our secret healthy ingredient that makes these blueberry muffins super fluffy!
  • Banana: Banana is another all-natural sweetener that we used in this recipe.
  • Almond milk: Feel free to use any type of milk you like.
  • vanilla extract: Vanilla does a great job of enhancing all flavors.
  • coconut oil: A little coconut oil provides a lot of moisture. You only need 2 tablespoons.

How Are These Blueberry Muffins Healthier?

When it comes to nutrient exchange and baking, there are three things to consider -> flour + sugar + fat. Check out the swaps we do below.

Flour: Skip the white flour and instead use white wholemeal flour as an alternative to wholemeal flour. This gives you a serving of whole grains and a delicious nutty taste. Alternatively, you can use a gluten-free all-purpose flour if you want to make them gluten-free.

A note on flour

Unfortunately, we advise against using a nut-free flour such as almond or coconut flour. You’ll have to find another recipe if that’s what you’re hoping for!

Sugar: This recipe is sweetened exclusively with all-natural sugar. We decided to remove the refined white sugar and replace it with honey and banana.

Fat: The only fat these healthy blueberry muffins need is 2 tablespoons of coconut oil. We were able to reduce the oil content because mashed bananas help make these muffins extra moist!

Don’t love bananas? We know there’s a lot of debate when it comes to the taste of bananas. If you’re one of those people who can’t, feel free to substitute about 1 cup of unsweetened applesauce. Tip #1 for SUPER fluffy muffins

You’re probably wondering how we got these healthy blueberry muffins so freaking fluffy. The answer? GREEK YOGURT.

Not only does Greek yogurt help moisten your muffins, but the acid helps activate the baking soda, making them super fluffy. We’re not keen on this at all and use this method in pretty much all of our muffin recipes.

We prefer to use plain Greek yogurt and you can use any percentage of fat you want.

Try our Blueberry Oatmeal Muffin recipe for a similarly flavored muffin but with a slightly different flour combination. This recipe contains both oatmeal and rolled oats.

Allow your blueberry muffin recipe to cool completely. Then transfer to an airtight container and store on the countertop for up to 3 days or in the fridge for up to 5 days.

How to freeze blueberry muffins

  1. Let the muffins cool completely first.
  2. Then place the muffins on a baking sheet and place the baking sheet in the freezer.
  3. Freeze for at least 2 hours.
  4. Once the muffins are frozen, place them in a freezer-safe, gallon-sized bag. Then remove as much air as possible and seal.
  5. Write “Blueberry Muffins” on the front of the bag and write a use-by date that is 3 months after the muffins were prepared.

To defrost: Take a frozen muffin out of the bag. Then thaw on the countertop for 30 minutes OR thaw in the microwave for a few minutes.
