Blanched bean sprouts with soy sauce 香油酱拌豆芽菜

This is an easy side dish that I often cook at home, it’s healthy and quick to make. Briefly blanch soybean sprouts, drizzle with a little sauce and top with fried garlic or shallots, goes well with any dish.

Ingredients:

200 g bean sprouts

1 tbsp Fried garlic/ shallot (with oil)

Sauce:

1 tsp brown sugar

1 tsp sugar

1.5 tbsp light soy sauce

2 tbsp water

Method:

1. Mix the sauce ingredients together and set aside.

2. Pour some water into a wok and bring to the boil. Add bean sprouts and blanch for about 60 seconds. Put the bean sprouts on a serving plate and reserve the water.

3. Add sauce ingredients to wok and simmer until sugar has dissolved. Pour the sauce over the bean sprouts, garnish with the fried garlic/shallot oil and serve immediately.
