This creamy and delicious French onion dip is super easy to make. Caramelized onions are the key to depth of flavor. Slow cooking the onions really brings out the natural sugars and turns them into a nice, velvety, jam-like texture. While the onions are caramelizing, you only need to chop a little and the rest of the dip is ready in no time. Thick Greek yogurt, fresh parsley, chives and a touch of Worcestershire combine with the velvety onions to create the tastiest French onion dip! Ingredient Notes

  • Caramelized onions– Yellow onions work best. Be sure to double the amount when preparing. They are magical flavor enhancers. There are many uses for them: soups, pizza, sandwiches, salad dressings, etc.
  • Greek yogurt– Any thick, smooth yogurt you like the taste of.
  • Fresh herbs– Parsley and chives are our favourites. Feel free to try whatever is fresh and available to you.

TOP: Slice the onions in crescents, grain-wise and no thinner than 1/4 inch thick to retain moisture inside and prevent scorching. This ensures proper extraction of the sugar.

  1. Cut the onions into crescents, the grain no thinner than 1/8 inch thick.
  2. Caramelize the onions: Heat a 10-inch cast iron skillet or carbon steel skillet over medium-high. When the pan is hot, add the onions and stir a few times – cook this way, without oil, for 5 minutes. Add the olive oil and salt and stir for a minute until fully incorporated. Reduce the heat to medium-low. Stir every 5-10 minutes for 30-50 minutes. The onions should be dark caramel in color, smell wonderful and be heavily reduced. Deglaze the pan by adding 1 tablespoon of water and scrape the pan to remove the stuck, crusted, browned bits from the pan. This is known as gladly and just bursting with taste. Don’t skip this step!   3. Dice the caramelized onions. Measure out 1/2 cup.
  4. In a bowl, combine yogurt, salt, pepper, chives, parsley, garlic powder, Worcestershire vinegar and apple cider vinegar. Fold in the chopped caramelized onions until the dip is well combined. Adjust the flavor by adding more salt, pepper, or vinegar as desired.
  5. Serve chilled with chips, crackers and fresh vegetables.
