Most grocery stores sell pre-made flatbread, which works well in this recipe. However, if you have the time, we highly recommend making your own flatbread. We have two simple recipes that you might want to consider:

  • Our Garlic Flatbread recipe is made with yeast, flour, olive oil, and water. Since the recipe contains yeast, it will take you less than two hours to prepare. They are soft and fluffy in the middle and make a great pizza crust.
  • This quicker recipe for soft and fluffy flatbread is made without yeast and takes about 30 minutes. Instead of yeast we use baking powder. The recipe is simple and perfect for making flatbread pizza.

Once you have the flatbread, you need to choose your favorite pizza topping. For us, that means a simple combination of tomato, fresh mozzarella, basil, olive oil and some oregano. I love this especially when tomatoes are in season. I’m all for anything that uses tomatoes or basil (check out our Easy Caprese Salad, this Tomato Bruschetta, and this Cherry Tomato Feta Salad).

How to make flatbread pizza

My favorite way to start pizza making is with pre-baked flatbread, which is why this recipe is so flexible. Keep in mind that you can use store-bought or homemade products.

If you’re making your own flatbread, you might be wondering why you can’t just add the pizza topping to the flatbread dough.

Well yes, you can, but after trying it both ways (starting with uncooked dough and with pre-baked flatbreads), we’ve found that when adding the pizza topping to cooked flatbreads, we prefer texture. The bottom of the flatbread will be slightly crispy and the center will remain soft.

I also love the fact that since we call for cooked flatbread we have the option to bake your own bread, we can do it a day or two in advance.

To prepare the pizza, simply place the flatbread on a baking sheet and top it with your desired pizza topping. Place the baking sheet in a 400°F oven and bake until the topping is heated through and, if you added cheese, it is bubbling and melted. This usually takes between 10 and 15 minutes.

Here are some suggestions for pizza toppings:

  • Brush the flatbread with olive oil and top with tomato slices, fresh basil leaves and mozzarella. Season with salt, pepper and some dried oregano.
  • Spread ricotta cheese on the flatbread and top with spinach leaves and/or fresh basil. Season with salt, pepper and some lemon zest.
  • Spread pizza sauce on the flatbread and top with your favorite pizza toppings. If you add meat, make sure it’s cooked first.
  • Spread the flatbread with crème fraîche or mascarpone and top with caramelized onions, cooked mushrooms and some fresh thyme.

Makes two pizzas

you will need

2 flatbreads, 6 to 8 inches in diameter

1 tablespoon extra virgin olive oil, plus more for serving

4 ounces fresh mozzarella cheese, sliced

8 fresh basil leaves, plus more for serving

1 large tomato, thinly sliced

Salt and freshly ground black pepper

Dried oregano

    1Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet large enough for both flatbreads with parchment paper or a silicone baking mat.

    2Brush or rub the olive oil over the bread. Layer the sliced ​​mozzarella, basil leaves and sliced ​​tomatoes on top. Season generously with salt, freshly ground pepper and oregano.

    3Bake the pizza for 10 to 15 minutes until the cheese is bubbling and beginning to turn light brown in spots.

    4Serve sliced, sprinkled with an extra drizzle of olive oil and a few more fresh basil leaves, torn into smaller pieces.
