Blackberry Cobbler is an absolutely delicious, easy, and impressive dessert that’s perfect for summer baking. Is that enough adjectives for you? It’s crunchy and chewy on the edges, soft and sweet in the center, packed with fresh blackberries!

This cobbler recipe only has 6 ingredients and takes less than 10 minutes to make! Top the still-warm ice cream with ice and be prepared to eat the leftovers right out of the pan!

  • blackberries – I recommend using fresh blackberries, but you can use frozen ones if that’s all you can find. However, fresh berries – especially in the summer months – have more flavor.
  • granulated sugar
  • Self-raising flour – If you don’t have this, you can make it yourself. details below!
  • milk – Any kind of milk will work.
  • vanilla extract
  • butter

What I don’t have: Self-raising flour?

No problem! You can easily make self-raising flour at home. You will need the following:

  • all purpose flour
  • baking powder
  • Salt

For each cup of flour, whisk together 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.

How to make Cobbler – easy!

  1. Beat together 1 cup granulated sugar, flour, milk and vanilla until smooth. Then stir in the butter until well combined.
  2. Pour the batter into a well-greased casserole dish. I like to use an 8×12 pan for this recipe.
  1. Then distribute the blackberries evenly over the dough. They will pull in a little, which is totally fine!
  2. Sprinkle more sugar on top for a nice, crunchy topping.
  3. Bake for 55-60 minutes. Serve warm with ice cream!

serving suggestions

I love topping Cobbler with vanilla ice cream, but here are a few other ideas:

  • Dust with powdered sugar
  • whipped cream
  • Any other type of ice cream
  • Caramel sauce

How to store and reheat leftovers

Just cover and refrigerate for up to 3 days! I don’t recommend freezing it as defrosting will lose the crispy, crunchy topping.

To reheat, simply portion out and microwave for 20 seconds.

This easy blackberry cobbler is quickly becoming a favorite!


  • 12 ounces blackberries
  • 1 1/4 cup granulated sugar, divided
  • 1 cup self-raising flour
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter

  1. Preheat oven to 350°F. Generously coat an 8×12 casserole dish with nonstick spray. Put aside.
  2. Wash blackberries and pat dry. Put aside.
  3. In a large bowl, whisk together 1 cup granulated sugar, flour, milk, and vanilla until smooth. Then stir in the butter until well combined.
  4. Pour the batter into the prepared form. Scatter the blackberries evenly over the batter. Sprinkle with the remaining 1/4 cup granulated sugar.
  5. Bake for 55-60 minutes until the top is golden brown and crispy.
  6. Allow to cool slightly and serve warm with ice if you like.

Remarks

Store airtight in the refrigerator for up to 3 days. Warm up in portions in the microwave.

If you don’t have an 8×12 inch casserole dish, you can use any 3 quart skillet. It works in a 9×13 inch pan, but it’s only thinner.
