I don’t have many regrets in life, but I discovered one thing recently: that we didn’t plant any tomatillos in our summer garden. I know NBD, but I REALLY love green salsa (aka salsa verde) and given the abundance of jalapeno peppers we received, I’m sad that my standard is regular red salsa now.

Don’t get me wrong, I love salsa of all kinds (there is no discrimination here), but if I had to choose, I would always choose green salsa. But now I know that tomatoes will be planted for next year!

Also interesting is that tomatoes need to be planted in pairs as they are not self pollinators and need a pair for pollination! So it looks like we’ll probably add another garden bed next year. There’s a lot more green salsa out there!

What is Salsa Verde?

Salsa verde, which means “green sauce” in Spanish, is a traditional sauce recipe in Mexican and Latin American cuisine. It’s usually made with tomatillos, hot chili peppers (usually jalapeño peppers), onions, garlic, cilantro, and lime juice.

Salsa Verde is used as a condiment for many Mexican-inspired dishes such as chicken enchiladas, tacos, grilled meats, or served directly with tortilla chips.

Ingredients for green salsa

This homemade salsa verde recipe is actually pretty easy to make. The most important step is roasting the tomatillos and jalapeños. The rest comes together in the blender or food processor.

  • tomatillos – Not to be confused with green tomatoes, which are actually a completely different type of plant! Most grocery stores stock tomatillos, but if you’re having trouble finding them, most Mexican or South American grocery stores will stock them. Reminder: Remove the paper wrappers before roasting.
  • Jalapeno peppers – You can also use sub-serrano peppers, which are a bit spicier, but I like jalapenos (and they grow a lot of those in the garden, too). If you prefer a mild salsa, feel free to gut it. You can also use 1 instead of 2.
  • Fresh Garlic – two cloves, peeled for more flavor.
  • coriander – You can omit it if you don’t like the taste of cilantro, but it’s essential if you want the authentic salsa verde flavor.
  • White Onion – about half the size of a large one, but take a look.
  • lime juice – I like the citrus kick of lime and use the juice of a whole lime. You can also grate the lime for even more lime flavor.
  • Salt – 1 teaspoon of salt. Unless sodium is an issue, don’t skimp on it.

How to make green salsa

STEP 1: Roasted tomatoes and peppers

Preheat the oven to 450 degrees F. Spread tomatillos and jalapeños on a parchment-lined baking sheet for 15 minutes or until tomatillos begin to brown on top and are cooked through. Remove the tomatillos and jalapeños from the oven and allow to cool slightly.

STEP 2: MIX SALSA

Halve the tomatillos and remove the top stem of the jalapeños. Place the tomatillos and jalapeños in a blender or food processor. Add garlic, cilantro, onion, lime juice and salt and blend until desired consistency is achieved. If it’s too thick, feel free to add a few tablespoons of water.

STEP 3: SURCHARGE!

Serve with tortilla chips, veggies, or garnish on burritos or bowls (more recipe ideas below).

How to store green salsa

Refrigerator: This green salsa keeps well in the fridge for up to a week. Just store it in an airtight container or mason jar to ensure no air can get in.

freezer: You can also freeze this salsa verde if you want to make it extra and save it for a later occasion. Just take it out of the freezer the night before and let it thaw completely on the counter.

  4. Place the tomatillos and jalapeños in a blender or food processor. Add garlic, cilantro, onion, lime juice and salt and blend until desired consistency is achieved. If it’s too thick, feel free to add a few tablespoons of water.
  5. Taste and season with additional salt, lime juice, or cilantro if needed.
  6. Serve with tortilla chips, veggies, or garnish on burritos or bowls.
  7. Store in an airtight container or jar in the refrigerator for up to 1 week.

Remarks

*If you don’t like it spicy, I recommend pitting your jalapeños before roasting them, but this salsa verde tastes best with a bit of spice! Feel free to use just 1 instead of 2.
