For the Chipotle Mayonnaise:

  • mayonnaise – Feel free to use any mayonnaise you prefer.

  • Chipotle powder – Imparts a smoky and earthy taste.
  • chilli powder – Adds flavor and can be mild to moderately hot.
  • kosher salt – Enhances the flavors of this Chipotle Mayonnaise.

for the salmon fillet:

  • sockeye salmon – I use it because it’s leaner and firmer than Atlantic salmon.
  • Avocado oil spray – Or replace it with ghee oil or extra light olive oil spray.
  • Mexicali seasoning – Or use this smoky chipotle spice mix. Both are great!
  • Whole grain bread – Use your favourite! I use Dave’s Killer Bread 21 Whole Wheat Thin Slices (not sponsored) because it’s the perfect size for a fillet.
  • Chipotle mayonnaise – See above.
  • bacon – I like bacon cut in the middle.
  • tomato – Adds a sweet, juicy and spicy flavor that balances the smokiness.
  • lettuce – Gives the sandwich freshness, crispiness and lightness.

Whisk together chipotle mayo ingredients

Make the chipotle mayo:

In a bowl, measure and add 1/2 cup mayonnaise, 2 teaspoons fresh lime juice, 3/4 teaspoon smoked paprika powder, 1/2 teaspoon chipotle powder, and 1/2 teaspoon chili powder with a small pinch of salt.

Whisk together and refrigerate until ready to use. Doing this first allows the flavors to unfold on standing.

Place the bacon slices, cut in half, in batches in a cool, large skillet. Heat on medium to medium, turning occasionally, until cooked through and reaching the desired crispiness. Transfer the crispy bacon to a plate lined with paper towels and set aside. Repeat process with remaining bacon until all 12 ounces are cooked through.

Prepare and cook the salmon:

If you want to know the easiest way to remove skin from salmon, then this is for you! Check the salmon fillets for pinbones and remove with tweezers or your fingers and discard. Place the salmon on a plate, skin side up. Bring a small pot of water to a boil. Once boiling, slowly pour over the skin of one fillet.

Pull off the skin

Peel and discard the skin. Repeat with the remaining fillets if necessary, discarding the water after each fillet. The hot water won’t cook your salmon.

Season the salmon fillets with Mexicani seasoning

Pat the skinless salmon fillets dry with a paper towel. Place them in a clean bowl or pan and drizzle with avocado oil. Season with 1 tablespoon Mexicali seasoning.

Preheat air fryer

Preheat your hot air fryer to 400°.

Air Roasted Mexican Salmon

Add your salmon fillets, spray with avocado oil, then air fry for 6 to 8 minutes (depending on thickness). You can also do this in an oven. It may take a minute or two longer, so cook until opaque and crumbles easily.

Toast the toast and spread with Chipotle mayonnaise

Meanwhile, toast the bread and spread some Chipotle mayonnaise on one side.

Build the BLT

Top the mayonnaise with a cooked salmon fillet, bacon, a slice of tomato and lettuce.

  • 1 tablespoon Mexicali seasoning
  • 8th slices thinly sliced ​​whole wheat bread, I like Dave’s Killer Bread (thinly sliced)
  • 1 tomato cut
  • 4 leaves lettuce, Use your favorite (Romaine, Iceberg or Bibb)

  • Meanwhile, toast the bread and spread some Chipotle mayonnaise on the inside of one slice.

  • Top the mayonnaise with a cooked salmon fillet, bacon, a slice of tomato and lettuce.

What is hot air frying?

  • Keep in mind that not all air fryers are created equal. Some preheat, some don’t. Some are smaller than others, so air frying may require you to work in smaller batches.
