We love wrapping salmon in foil because it infuses the salmon with whatever you cook it in. In this recipe we use herb butter.

Prepare salmon
Remove your salmon fillets from the packaging and use two pieces of paper towel to remove as much moisture from the fillets as possible.

After that, everything revolves around the foil packaging. Place the salmon on a piece of heavy-duty foil, then fold in all four sides and seal. Just make sure that neither heat nor liquid can escape.
Why foil packaging?
Making a foil wrap is the best way to steam your salmon on the grill. It traps all the flavors and heat to cook the salmon evenly!
Grill salmon in foil
Now it’s time to grill your salmon! Preheat grill to 400°F. Once the salmon is fully heated, place directly over the flame of your grill and allow to cook for 8-10 minutes.
We recommend checking your salmon after 8 minutes. The goal is for your salmon to be lighter in colour, firmer and flakier! Not done? Reseal and continue cooking.

Ingredients
Grilled salmon in foil
- 2/3 Lb. Salmon cut into 2 fillets
- 2 tablespoon butter softened
- 2 tablespoon freshly chopped cilantro or parsley
- 1 teaspoon chopped garlic
- salt and pepper taste good
- 1 tablespoon lime juice ~1/2 lime
Pineapple salsa
- 1 small pineapple deseed and cut into strips (about 2 cups chopped)
- 1/2 tablespoon chilli powder
- 1/2 Red onion chopped
- 1/4 Cup freshly chopped coriander
- 1 Cup cherry tomatoes quartered
- 1 tablespoon freshly chopped jalapeño
- 1 tablespoon Apple Cider Vinegar
- 2 tablespoon lime juice
- 1/8 teaspoon Salt

Preheat grill to 400°F. Spray a large piece of aluminum foil with nonstick cooking spray. Put aside.

Prepare salmon fillets by patting dry with a paper towel and seasoning with salt and pepper.

Then mix together the softened butter, cilantro, garlic, salt and pepper in a small bowl.

Spread the butter mixture over the salmon fillets and place on the aluminum foil. Then squeeze the lime juice.

Create a foil wrap by folding the top half of the aluminum foil over the salmon and pressing the sides together. Make sure there are no holes for air to escape.

Grill the salmon at 400ºF for 8-10 minutes* or until the internal temperature is 135ºF and flaky.

Remove from the oven and open the foil wrapper to let the steam escape. Leave to rest for 5 minutes before eating.
Pineapple salsa

In a medium bowl, combine onions, cilantro, cherry tomatoes, jalapeño, apple cider vinegar, and lime juice. Put in the fridge for later.

Prepare the pineapple by core and cut into strips. Season with 1/2 tablespoon chili powder and about 1/8 teaspoon salt.

Grill the pineapple at 200°C over direct heat for 12-15 minutes, turning every 5 minutes.

Remove from the heat, let cool and then cut into small pieces.

Add pineapple to remaining salsa ingredients and mix well.
