What is Sriracha?

Sriracha is a medium-hot fermented hot sauce. It consists of various red chillies, distilled vinegar and garlic. Named after Si Racha, a town in Thailand, this spicy spice is commonly used in many Asian cuisines.

In our area (San Diego) it’s called “rooster sauce” because of the rooster motif on the bottle.

What is aioli?

Technically, this is sriracha mayonnaise, not aioli. Why? Classic Aioli is an emulsion of olive oil that results in a thick, rich and flavorful condiment. It’s not a mayonnaise-based sauce. However, the two terms have been used interchangeably in our part of the world in recent years.

In the US, if you order anything with “aioli” in it (at bars, grill restaurants, etc.), you’ll most likely get a mayo-based sauce.

Sriracha Mayo vs Yum Yum Sauce

Both have mayonnaise as their base, but this is where they start to differ. Sriracha Aioli uses Sriracha to add spiciness, while Yum Yum Sauce has a mild flavor and gets its red color from a combination of ketchup and paprika.

Despite these differences, they can actually be used interchangeably.
