White Whole Wheat Flour: This blueberry banana bread is made with white wholemeal flour. This is our favorite flour for making healthy muffins or breads! We choose this flour over regular whole wheat because it makes for a less dense bread!

Blueberries: The star of this Blueberry Banana Bread is obviously the blueberries! This adds a sweet twist to this classic recipe!

Bananas: The second star of this recipe is, of course, mashed bananas. In this recipe we used 3 ripe bananas. Don’t go short and be sure to use RIPE bananas as they are sweeter and more flavorful.

Greek yogurt: For a little extra protein, we’ve thrown in some Greek yogurt in this blueberry banana bread recipe. This also helps reduce the amount of extra fat or oil needed for a moist bread!

vanilla extract: Because every bread deserves some vanilla.

maple syrup: Instead of using refined sugar, we stuck with maple syrup, our favorite plant sugar!

Ccoconut oil: This recipe only requires 2 tablespoons of melted coconut oil. If you don’t have this oil at home, you can easily use another cooking oil like canola oil or melted butter.

Frozen blueberries are perfect for this recipe, so feel free to swap out fresh for frozen.

How to make banana blueberry bread

  1. Mix dry: First, mix the dry ingredients together in a medium-sized bowl and set aside.
  2. Mix wet: In a large bowl, mash the bananas until only a few lumps remain. Then add the remaining wet ingredients and mix.
  3. Combine dry and wet: Add dry ingredients slowly and stir until smooth. Finally add coconut oil and blueberries and mix again.
  4. Bake: Pour the batter into a greased baking pan. Bake at 350°F for 45-50 minutes or until fully cooked.

  • Tent if required: Banana bread looks too brown on the sides? Simply cover with a piece of foil for the last 15 minutes.

Really delicious blueberry banana bread made with whole wheat, Greek yogurt, maple syrup, and fresh blueberries!

  • First, preheat the oven to 350°F and spray a loaf pan with nonstick cooking spray.

  • Set aside 1/2 cup of blueberries for later. Combine dry ingredients in a medium bowl and set aside.

  • In a separate mixing bowl, mash the 3 bananas with a fork (alternatively, you can put them in a blender to make them extra smooth). Then mix in the remaining wet ingredients minus the melted coconut oil.

  • Slowly add dry ingredients to wet. Then add melted coconut oil and mix again.

  • Pour the batter into a greased baking pan, sprinkle with the last ½ cup of blueberries and bake at 180°C for 45-50 minutes.

  • Remove the banana bread from the oven, let cool for 5 minutes and remove from the pan to finish cooling.

  • Instructions for the freezer: Let the blueberry banana bread cool completely. Then wrap the bread tightly in cling film, removing as much air as possible. Follow the cling wrap with aluminum foil. Freeze up to 3 months.
