  • Big shrimp – Get frozen shrimp from the supermarket and make sure they are deveined.

How to make Cilantro Lime Shrimp

  • Prepare shrimp. Depending on the type of shrimp you buy, you may need to remove the shell. Whether you can leave the tails on or take them off is up to you. Just make sure the vein is removed, then pat dry.
  • Season. Toss the shrimp with the olive oil, garlic, chilli powder, cayenne pepper, salt and pepper.
  • Cook. Place the seasoned shrimp in a hot skillet and cook until pink and cooked through, 4-5 minutes on each side (more or less depending on the size of the shrimp used).
  • End. Squeeze in the lime juice and add the fresh coriander. Stir together until the shrimp are evenly coated. Remove from the stove and serve.

How to thaw frozen shrimp

I always buy a bag of frozen shrimp when they’re on sale so I can grab them quick on busy weeknights. Here are your two basic methods for defrosting.

  • Simple thawing method: This is great if you have planned ahead. Just take the shrimp bag out of the freezer and let it thaw in the fridge overnight.
  • Rapid thawing: method: I mostly do this because I never remember to take it out. Place the shrimp in a large bowl and fill with cold water. Let the shrimp sit for 10-15 minutes, then drain and repeat until the shrimp are thawed. It usually takes 2-3 times to fully defrost the shrimp. However, this depends on the size of the shrimp used.

Why do you leave your tail on while cooking?

You often see tails left over with shrimp, and that’s because the tail has flavor. It seeps into the shrimp as it cooks and just adds more flavor to the dish. Yes, it takes more effort to sever the tails at the table while eating, but I think it’s worth it for the taste. Whether or not you want to take them off to make serving easier is up to you.

What if I don’t like cilantro?

It’s said that up to 14% of the population has a gene that makes cilantro taste like soap. If it is you or for someone you are cooking for, don’t use it! Fresh parsley is a great substitute for any recipe that calls for cilantro.

How to store leftover shrimp

Store leftover shrimp in an airtight container in the refrigerator. It takes up to 3 days. When you’re ready to warm up.

  • Microwave: I like to heat at 50% power with 30 second intervals so the shrimp don’t get too hot too quickly. Shrimp can get a bit rubbery in the microwave, so keep an eye on them.
  • Stove: You can also use the stove for slightly better results. The key is to simply warm the shrimp through over medium-high heat. You don’t want to continue cooking them, so don’t use too high a heat.

  • 1 pound shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • 2 garlic cloves, chopped

  • 1/2 teaspoon salt

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon black pepper

  • 1/8 teaspoon cayenne pepper

  • 2 tablespoons lime juice

  • 1/4 cup cilantro, finely chopped

  1. In a bowl, toss together the shrimp, olive oil, garlic, chili powder, salt, pepper, and cayenne until well coated.
  2. Heat a large skillet over medium-high heat. Once the pan is hot, add the shrimp and spread them out in a single layer.
  3. Cook for about 4-5 minutes per side (how quickly they cook depends on the size of your shrimp).
  4. Once the shrimp are pink and opaque, they should be cooked through. Mix in the lime juice and fresh coriander.
