I posted this on Instagram a few months ago and have been making it for my daughter once a week since. It’s the perfect little vehicle for protein, veggies, guacamole, and tons of flavor. She’s obsessed and I put her in my mouth as a snack too. You could easily make these burgers in large sizes for bigger kids and adults!

Ingredients

  • onion and garlic – I use a mixture of red and sweet onions
  • Red pepper – an important ingredient for fajitas
  • lime juice – helps to develop the flavor of the fajita vegetables
  • Ground Chicken – Be careful not to use anything that is too lean and remember that fat has flavor!!
  • Spices – Garlic powder, ground cumin, ground chili powder and kosher salt
  • olive oil – for cooking

How to make fajita burgers

Begin by preparing the pepper mixture. Sauté the diced peppers and onions until tender, then add the garlic and sauté until fragrant, 60 seconds. Remove from the heat, let cool slightly and season with salt, pepper and lime juice.

Then start with the chicken fajita burgers. Toss the ground beef, seasonings, and cooled, cooked fajita vegetables with the oil remaining in the pan until well combined. Form small, toddler-sized flatbreads from the mixture.

Reheat the same pan over medium-high heat with another tablespoon of oil. Cook the fajita burgers until cooked through, about 6 minutes per side. Serve with guacamole and pico de gallo / or chopped cherry tomatoes.

Variations and Substitutions

Red pepper – Alternatively, feel free to use an orange or yellow pepper.

Ground Chicken – You can also use ground turkey or ground beef

I love serving these with my homemade guacamole and pico de gallo. Yes, my toddler eats Pico – she’s clearly made of the same cloth as me!

If you want to double the fajita vegetable mix, it’s great as a side dish or tossed into pasta the next day!
