Notes on ingredients
- pecans– Give the morsels a buttery taste. You can also replace them with another type of nut, e.g. e.g. walnuts. If you do this, however, be sure to choose similarly sized nuts.
- Cinammon--If you prefer your bites to taste more like cinnamon rolls, double the amount of cinnamon.
How to make this recipe
- Place pecan halves into the wells of two muffin tins. Whisk together the flour, baking powder and salt.
- Make a well in the dry ingredients and pour in the cream. Mix until a soft dough forms. Let it sit for a few minutes.
- Mix together the sugar and cinnamon together.
- Roll out the dough into a rectangle one centimeter thick. Brush the dough with butter, then sprinkle with salt and the sugar mixture. Roll up the dough tightly and chill while the oven preheats.
- Heat up the oven up to 400°F.
- Cut the dough into 24 pieces. Place a slice cut-side up in each muffin tin. Bake until brown.
- Take out of the oven and immediately pop the pecan bites out of the cans. Serve warm.

Sticky pecan bites

Place one pecan half, top side down, in each muffin pan. In a medium bowl, combine flour, baking powder, and salt and mix thoroughly with a whisk or fork.

Make a well in the middle. Pour the cream into the well. Using a rubber spatula, fold together the flour mixture and cream and mix together until the dry ingredients are completely incorporated and a soft dough forms. The dough will not look completely smooth. Let the dough rest for 2 to 3 minutes to set.

Meanwhile, in a small bowl, mix together the sugar and cinnamon.

On a lightly floured surface, using a floured rolling pin, roll out the dough into a rectangle about 12 by 7 inches and 1/4 inch thick.

Using a small offset spatula or your fingertips, brush the dough with the softened butter, then sprinkle with a pinch of salt and the brown sugar, leaving a 1/8 to 1/4 inch border .

Start at a short end and roll up the dough tightly. Gently stretch the dough to slightly lengthen the roll to a length of about 30cm. Refrigerate for at least 30 minutes.

Preheat the oven to 400°F (204°C). Place an oven rack in the bottom third of the oven. Lightly brush the muffin cases with butter.

Cut the pastry crosswise into 24 equal pieces. (The easiest way to do this is to cut the dough in half, then cut each half in half, then cut each portion into 6 pieces. This math is easier than it sounds.) Place each piece of dough, cut-side up, in a muffin tin.

Bake the sticky buns for 12 to 15 minutes until brown. Halfway through the baking time, turn the pan(s) front to back to ensure even baking. (The longer you leave them in the oven, the crispier the edges will be, but the drier the batter will be.)

Immediately turn the buns out onto a piece of baking paper on a heat-resistant surface. (And we mean right away, otherwise the buns might stick to the pan.) Serve warm.
