First, preheat the oven to 190°C (375°F) and line a 12-hole muffin tin with paper liners.

First, Prepare the muffin batter. In a medium bowl, whisk together the flour, baking powder, poppy seeds, and salt to form a well-mixed mixture. In a separate large bowl, combine the sugar and lemon zest. Mix gently to release the fragrant oils and turn the sugar a pale yellow hue.

Add eggs to the sugar and lemon zest mixture and mix well. Add fresh lemon juice and vanilla extract to further enhance the vibrant citrus flavor. Gradually add oil to the mixture until you get a smooth consistency.

Add flour mixture and buttermilk alternately and gradually work both into the batter. Be careful not to mix too much as this can result in a dense texture.

Divide the batter evenly among the muffin liners to ensure even distribution.

Prepare the crumble topping by combining sugar, flour and melted butter in a medium bowl. Sprinkle the crumb mixture onto each muffin for a gorgeous texture contrast.

Bake the muffins for about 25 minutes or until lightly golden and a toothpick inserted in the center comes out clean. Once the muffins are perfectly baked, transfer them to a wire rack to cool.
