Stuck in the sandwich rut? This roasted turkey sandwich with fresh tomatoes, spinach and a delicious creamy spread is incredibly flavorful and perfect all year round.

There’s just something special about a sandwich with a crispy crust and fresh ingredients, and it always seems to hit the spot. This Herbed Tuscan Panini is no exception. It has layers upon layers of delicious flavor.
While making paninis may seem difficult, it doesn’t require gourmet-level cooking skills. Take some of your favorite sandwich ingredients and mix them together into a perfect little packet.

WHAT INGREDIENTS DO I NEED?
- 2 boneless, skinless turkey breasts
- ¼ cup olive oil
- ⅔ cup plain Greek yogurt – divided
- 1 tablespoon balsamic vinegar
- 1 teaspoon garlic powder
- ½ teaspoon dry basil
- Pinch of oregano
- pinch of salt and pepper
- 1 lemon
- 1 large tomato
- spinach
- Sliced ​​bread (I used sourdough)
How do I prepare a Tuscan herb panini?
I like to use the freshest ingredients when cooking as often as possible. For this recipe, I bought fresh turkey breast from the grocery store and cut it into smaller portions that fit better on a sandwich.
In a large bowl, combine turkey with ¼ cup olive oil, ⅓ cup Greek yogurt, basil, oregano, garlic powder, salt and pepper. Cover and place in the fridge for at least 2 hours (up to overnight).
This marinade of Italian spices and herbs in olive oil helps the turkey retain an incredibly juicy and flavorful flavor. The longer you let the turkey marinate, the better.

You can then cook the turkey breast on a grill or in a skillet for about 5-10 minutes or until fully cooked through.
For the creamy spread, you have the option of using either Greek yoghurt or mayonnaise as a base. I’ve used both… it just depends on what I have in my kitchen at the moment. Mix â…“ cup Greek yogurt with a pinch of oregano, salt, pepper and the juice of one lemon. Stir well until all ingredients are fully mixed. Set aside until ready to prepare your sandwich.


To assemble the sandwich, choose your favorite bread and spread a slice of it with the delicious spread. Next, layer the turkey breast on top along with freshly sliced ​​tomatoes and spinach.
When your sandwich press, George Foreman grill, or skillet is hot and ready, place your sandwich in it and cook for about 1-2 minutes (If using a pan, turn it over and cook another 1-2 minutes). Once your sandwich is golden brown, carefully remove it from the grill.
