Ingredients
- Shrimp: You can buy fresh or frozen jumbo shrimp, peeled or unpeeled. Unpeeled is generally cheaper, but you will need to peel and devein it.
- Spice: cumin, salt, pepper
- Garlic: Crush five cloves of garlic.
- Lime: Squeeze 2 tablespoons of juice from a medium lime.
- Coriander: Chop fresh coriander.
How to make Cilantro Lime Shrimp
- Season the shrimp with cumin, salt and pepper.
- Cook shrimp: Heat a large nonstick skillet over medium-high heat. Add a teaspoon of olive oil and half the shrimp to the pan. Cook them undisturbed for about two minutes. Flip the shrimp and cook until opaque, an additional minute. Put on a plate.
- Garlic: Add the remaining oil and the shrimp to the pan. After a few minutes, flip the shrimp, add the garlic and cook for a minute. Return the first batch of shrimp to the pan and mix well to evenly incorporate the garlic. Take the pan off the stove.
- Lime and Coriander: Squeeze the lime juice and sprinkle the coriander over the shrimp.
What to serve with Cilantro Lime Shrimp
I like to eat it with rice and an avocado romaine lettuce. Here are some more suggestions on how to serve this protein:
storage
Cooked shrimp can be stored in the refrigerator for up to 3 days. You could microwave it, but I recommend eating the leftovers cold.
variations
- Don’t like cilantro? Substitute fresh chives.
- Switch flavors with basil or parsley and lemon juice.
- Shrimp not browned? Your pan may not have been hot enough, or it may have been overfilled.
