What you need for grilled chicken skewers
We decided to make not one, but TWO marinades for this recipe to really add a unique flavor to every bite. They marinate the chicken and veggies separately, but we promise it’s worth it.
for the CHICKEN
- Chicken breast
- soy sauce
- Worcester sauce
- lime juice
- orange juice
- Honey
- chopped garlic
- grated ginger
- Salt
- olive oil
- rice vinegar
- Sriracha (optional if you like some spiciness!)
for the VEGETABLES
- olive oil
- sesame oil
- lime juice
- chopped garlic

- freshly chopped coriander
- Honey

How to prepare grilled chicken skewers
These Rainbow Grilled Chicken Skewers are as easy as 1-2-3-4! Let’s do it:
Marinate the chicken
Start by dicing the chicken breasts and placing them in a large bag or rimmed deep bowl to marinate.
Place all of the ingredients for the chicken marinade in a small bowl and stir together until the honey is dissolved.
Pour the chicken marinade over the chicken pieces and mix the chicken with the marinade. Seal the bag and place the chicken in the fridge for a minimum of 30 minutes and up to 2 hours.
Why should I marinate my chicken skewers?
A marinade adds so much flavor to your chicken and veggies. Think of it as an aroma bath 😀
Prepare the vegetables
Place the chopped peppers, purple onions, and garlic cloves in a large bowl.
Prepare the vegetable marinade by placing all of the marinade ingredients in a mason jar. Cover the jar and shake until well combined. Then pour the marinade over the vegetables and stir to coat.
Assemble chicken skewers
Use water-soaked wooden skewers or metal skewers to assemble the skewers. Thread a piece of chicken onto the skewer, then a bell pepper, an onion, and a clove of garlic. Repeat the process until you have 3 or 4 pieces of chicken on the skewer. Set the kebab aside and repeat the process until all the ingredients are distributed on the skewers.
BBQ skewers
Place the skewers on the grill at 200°C (400°F), turning every 5-7 minutes for 25-30 minutes or until the chicken has an internal temperature of 165°F.
Remove from the grill and let the chicken rest for 5 minutes. Serve with freshly squeezed lime juice, fresh cilantro, and your favorite side dishes!

How Long Should I Marinate Chicken?
We recommend marinating chicken for at least 30 minutes and up to 2 hours. Check out our post on chicken marinades.
Do skewers need to be marinated?
While you don’t have to marinate your skewers, we recommend it. Because you cut chicken and veggies into small pieces before grilling, a marinade keeps them juicy and doesn’t dry out in direct heat.

Ingredients
vegetable marinade
- 3 big peppers cut into 2.5 cm squares (we used 3 different colors)
- 1 medium purple onion cut into 1 inch squares
- 1 clove of garlic peeled off
- 1 tablespoon olive oil
- 2 teaspoon sesame oil
- 1 tablespoon fresh lime juice
- 2 teaspoon chopped garlic
- 1 teaspoon freshly grated ginger
- 1 teaspoon Salt separated
- 2 teaspoon rice vinegar
- 1 tablespoon freshly chopped coriander
- 1 teaspoon Honey
To serve
- Freshly squeezed lime juice
- Freshly chopped coriander

First marinate the chicken. First, cut the chicken breasts into 1.5 to 2 inch cubes and place in a large bag or deep rimmed bowl. Put them aside.

Now make the chicken marinade. Add soy sauce, Worcestershire sauce, lime juice, orange juice, honey, garlic, ginger, salt, olive oil, rice vinegar and sriracha (if using). Mix all the ingredients until the honey has dissolved.

Make the vegetable marinade and add olive oil, sesame oil, lime juice, garlic, ginger, salt, rice vinegar, cilantro, and honey to a mason jar. Cover the jar and shake until well combined.

Preheat the grill to 400°F.
