Cauliflower Cheese Fritters – My picky eater

Delicious savory fritters made with cheddar cheese and frozen diced cauliflower. This is a great way to get some cauliflower in your picky eaters.

Cauliflower is one of those vegetables that we know is so healthy for us, but it’s not the easiest vegetable to get kids to eat.

It’s packed with antioxidants, high in fiber and low in calories.

A few years ago I discovered that Tesco sells these bags frozen diced cauliflower and it was a game changer for me.

Fresh or frozen cauliflower

I know these types of products get criticism for the plastic packaging, so you can also make your own at home by coarsely flashing or finely chopping fresh cauliflower.

However, I also believe that the nature of this product, because it is chopped and frozen so quickly after the cauliflower is picked, means it is tastier for children.

I find the older the cauliflower, the stronger the flavor. So much easier to get my kids to eat cauliflower like this, which was picked, cut, and frozen in a short amount of time.

How to make Cauliflower Fritters

The first step is to put some flour, baking powder, milk and egg in a large bowl and mix them together with a spoon.

Then add some shredded mature cheddar cheese and the diced cauliflower straight from the freezer. The cauliflower does not need to be cooked before adding. It cooks when the donuts are fried on the stove.

All ingredients are added and mixed with a wooden spoon in a clear glass mixing bowl.

The mixture should be quite thick as you see in the image below.

Take a large spoonful of the mixture and pour it into an oiled skillet.

5 donuts should fit in the pan. The mixture makes 10 donuts, so you need to cook them in 2 batches.

Ingredients all mixed together.

Fry on one side for 4 minutes, flip and fry for another 4 minutes on the other side.

Remove the donuts and repeat with the remaining mixture.

Fritters are placed in a frying pan ready to cook.

Serve some chopped veggies for lunch and you have a seriously tasty and nutritious meal that’s perfect for cauliflower maniacs!

ingredients

  • 100g plain flour
  • 1 teaspoon baking powder
  • 1 medium egg
  • 100ml milk
  • 100g grated mature cheddar cheese
  • 150g frozen diced cauliflower
  • ½ tbsp oil

instructions

  1. Place the flour, baking powder, egg and milk in a large bowl and mix well with a spoon.
  2. Add the shredded cheese and frozen diced cauliflower and mix again.
  3. Heat the oil in a large frying pan on low.
  4. A large spoonful of the mixture at a time to make a donut.
  5. Repeat until you have 5 donuts in the pan.
  6. Fry for 4 minutes, flip and fry for another 4 minutes on the other side.
  7. Remove the donuts from the pan and repeat with the remaining mixture.
  8. You should be able to make 10 donuts in total.

Remarks

These donuts will keep in the fridge for up to 2 days. They can be eaten cold or reheated in the microwave or on the stovetop in a pan.

They can also be frozen. Thaw at room temperature and reheat as above.
