Whenever I have some leftover fried chicken, I use the leftovers to make my favorite Chinese chicken salad. A restaurant-quality salad that actually tastes a lot better at home.

Packed with romaine lettuce, Chinese cabbage, tangerines, cilantro, scallions, salted cashews, scallions and of course the crunchiest wonton strips. While store-bought is fine, nothing compares to the homemade version.

Not to mention the perfect matching sesame ginger dressing that goes so well with it. The dressing can be made ahead of time and kept in the refrigerator before serving. And you can consume all of the wonton strips during the prep time.

  • 1 Head romaine, shredded
  • 4 cups shredded Chinese cabbage
  • 3 cups leftover shredded fried chicken
  • 1 (15 ounces) may tangerines, dehydrated
  • ½ Cup chopped fresh coriander leaves
  • ½ Cup roasted salted cashew nuts
  • 3 green onions, thinly sliced
  • 2 cups crispy wonton strips, homemade or store bought
  • 2 teaspoon toasted sesame seeds

for the sesame ginger dressing

  • ¼ Cup rice vinegar
  • 3 tablespoon Orange jam
  • tablespoon rapeseed oil
  • tablespoon toasted sesame oil
  • 1 tablespoon Reduced sodium soy sauce
  • 2 teaspoon freshly grated ginger
  • 2 teaspoon toasted sesame seeds
  • Kosher salt and freshly ground black pepper, taste good
  • To assemble the salad, place romaine lettuce in a large bowl; Top with cabbage, chicken, tangerines, cilantro, cashews and green onions. Pour the sesame ginger dressing over the salad and mix gently.

  • Serve immediately, garnished with wonton strips and sesame seeds.

for the sesame ginger dressing

  • In a small bowl, whisk together the rice vinegar, orange marmalade, canola oil, sesame oil, soy sauce, ginger, and sesame seeds. Season with salt and pepper.
