This macaroni coleslaw is one you’ll make again and again. My family absolutely loved this combo and it’s super easy to make and a wonderful addition to any summer get together. It’s very versatile as you can add any veggies your family likes.
Ingredients needed for Macaroni Slaw:
Elbow noodles (uncooked)
Bag of coleslaw
Red pepper
English cucumber
Red onion
mayonnaise
White granulated sugar
Apple Cider Vinegar
Dijon mustard
Sometimes people ask why I like to use English cucumbers in my summer salads, but we love the taste and you don’t really have to peel them, which is nice. A few ways you can transform this salad:
- Add diced cheddar cheese
- Also add green peppers
- Add water chestnuts
- Add green olives
- Could use the carrot, broccoli and cabbage salad bag to shake things up.
If your family prefers Miracle Whip, use this one, it will still be delicious. You’ll definitely want to chill this salad first, it’s so good chilled. This salad makes a big impression, which makes it a good choice for a get-together. Great to take to a potluck. We loved it with a pork tenderloin. It was a wonderful meal.

Macaroni Slaw
This Macaroni Slaw is perfect for a get together!
Servings: 12 portions
- 8th ounces of elbow noodles uncooked
- 1 16 ounce Bag of coleslaw
- 1 Red pepper chopped
- 1 English cucumber chopped
- 1/2 Red onion chopped
- Dressing Ingredients:
- 1.5 cups of mayonnaise
- 1/3 Cup of white sugar
- 1/4 cup of apple cider vinegar
- 1 tablespoon of Dijon mustard

Prepare noodles according to package directions, drain and allow to cool.

In a bowl, combine the coleslaw mixture and chopped veggies.

In a separate bowl, mix together all the ingredients for the dressing. Once the noodles have cooled, mix together the coleslaw mixture and noodles and garnish with the dressing.

Mix well and chill before serving. This makes a large salad perfect for a family gathering.
