  • 2 cups (250 g) all-purpose flour
  • 3/4 tsp (3g) Baking Powder
  • 2 tsp (6 g) cornstarch
  • 1/2 tsp (3g) salt
  • 3/4 Cup (150g) sugar
  • Lemon zest from a lemon
  • 1 egg
  • 3/4 Cup (170 g) vegetable oil
  • 1 tsp (5g) Vanilla Extract
  • 2 tablespoon (30 ml) lemon juice
  • 1 Cup (150 g) fresh strawberries chopped
  • 3.5 oz (100 g) white chocolate chips/chunks

instructions

  • Preheat the oven to 180°C. Line two baking sheets with parchment paper.

  • In a medium bowl, whisk together the flour, baking powder, cornstarch, and salt. Put aside.

  • In a large bowl, mix the sugar with the lemon zest until fragrant. Add the egg and oil and stir. Add the vanilla extract and lemon juice and mix again until incorporated.

  • Gradually incorporate the flour mixture and fold in the chocolate chips or chips and the chopped strawberries. Don’t overmix.

  • Using an ice cream scoop, scoop out equal portions of batter and place them 1 inch apart on the prepared baking sheets.

  • Sprinkle each with granulated sugar.
