Easy Sheet Pan Chicken Thighs

We love sheet pan chicken drumsticks because it’s a sort of “throw everything you have in a pan” and bake recipe.

This Chicken and Vegetables in Sheet Pan recipe features boneless, skinless chicken thighs, a delicious chicken seasoning, cauliflower, sweet potatoes, and a whole roasted bulb of garlic.

If you have an hour, you have time to make this healthy dinner idea!

Everything you need

You don’t need much to make this sheet pan chicken and vegetable dish. Another nice thing about this chicken recipe is that you can substitute if you don’t have everything on the ingredient list.

  • Boneless, skinless chicken thighs
  • sweet potato
  • cauliflower
  • Onion
  • Garlic
  • chicken seasoning

Can I use bone-in chicken thighs?

Feel free to use either boneless or boned thighs. We have tested this with both and both work.

Change the spices

Our delicious chicken seasoning is a combination of garlic powder, chilli powder, cumin, dried thyme, ground mustard, dried basil, ground pepper, red pepper flakes, salt, brown sugar and paprika.

If you don’t have all the spices, don’t worry, you can skip some spices or even replace them with something you have, or use one of these mixes:

How to make sheet pan chicken and veggies

  1. Preheat: Before doing this, preheat the oven to 400ºF and spray the baking sheet with non-stick cooking spray or drizzle with olive oil.
  2. Season chicken: Sprinkle the chicken thighs with the chicken seasoning and rub the chicken seasoning into the chicken with your hands. Make sure the entire chicken leg is covered. Let the chicken sit.
  3. Season vegetables: Sprinkle the sweet potatoes, cauliflower, onion and garlic with salt and garlic powder.
  4. Throw it on the baking sheet: Place the chicken in the center of the baking sheet and spread the sweet potatoes on one side of the chicken and cauliflower and onions on the other side.
  5. Drizzle All: Drizzle chicken and vegetables with olive oil, maple syrup and garlic and toss.
  6. Bake! Place the baking sheet in the oven and bake for 20 minutes, flip and then bake for another 15 minutes.

Be sure to oil the baking sheet.

The last thing you need is for your chicken thighs and our veggies to stick to the baking sheet. Be sure to drizzle or sprinkle your baking sheet liberally before placing everything on the baking sheet!

You can use any type of chicken.

Can I use chicken breasts in this recipe? Yes, you could certainly use chicken breast for this recipe. Baking time will vary depending on the size of your chicken breasts. Make sure the chicken’s internal temperature is 165ºF and you’re golden.

You can substitute any of your favorite veggies for the veggies in this recipe! Below are some great vegetable substitutes.
