This Caribbean Pulled Chicken is one of our favorite slow cooker chicken recipes of all time!
It’s your favorite cut of chicken, slow cooked with a delicious combination of sweet, savory and aromatic spices to create a delicious, hearty yet light meal.
Our favorite way to serve this chicken is in lettuce wraps, but it can also be eaten over rice, in tacos, or just eaten straight out of the pot with a fork…or your fingers.

Ingredients needed for Caribbean Pulled Chicken:
- Chicken: Make sure you use boneless, skinless chicken.
- Vegetables: We use a mixture of fresh peppers, onion and jalapeño and a little diced canned tomatoes.
- Chicken soup: Adds tons of flavor and moisture to the chicken.
- aromatics: We lighten up the flavors a bit with freshly chopped garlic and coriander.
- lime juice: Lime juice adds a bright citrus flavor and helps tenderize the meat as it cooks.
- Spice Rub: Our Spice Blend is made with a sweet and tangy blend of ground ginger, cumin, sea salt, black pepper, all spices, paprika and coconut sugar.
- Mango salsa: Feel free to use store-bought mango salsa or make an easy homemade concoction of mangoes, diced red onions, chopped cilantro, and lime juice.
- To serve: Bibb lettuce (or any other type of lettuce you prefer), avocado, tomato, or other toppings of your choice.

This tasty pulled chicken recipe comes together in just 10 minutes of convenient time! Also with homemade salsa!
- Combine and cook: In your slow cooker, combine chicken, tomatoes, broth, greens, garlic, lime juice, cilantro, and spices. Mix well, then cook on high for 3 hours.
- Make the salsa: Mix all the ingredients for the salsa in a bowl and place in the fridge.
- Shred and Serve: Once the chicken is done cooking, shred it right in the crockpot, then serve as desired.

Tips and hints for Caribbean pulled chicken
- Mix well. Once you’ve combined everything in the slow cooker, make sure you mix everything thoroughly to evenly distribute all those flavors before cooking.
- After cooking, let the chicken rest. I recommend letting the chicken rest for 10 minutes before shredding it. This gives time for the flavor and moisture to redistribute into the meat.
- Drain if necessary before serving. If you notice a lot of excess moisture, I recommend scooping the shredded chicken out of the pot with a slotted spoon to allow some of that moisture to drain away. If it’s too much, you’ll end up with a mess.

Caribbean Pulled Chicken:
- 1 1/2 Pound boneless and skinless chicken
- 1/2 Cup canned diced tomatoes
- 1 Cup chicken soup
- 1 paprika rolled
- 1 Onion rolled
- 2 Garlic cloves chopped
- 1 jalapeno chopped
- juice of 1 lime
- 1/2 Cup coriander chopped
- 1/2 teaspoon ground ginger
- 1 tablespoon cumin
- 1 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon pimento
- 1 tablespoon paprika
- 1/2 teaspoon coconut sugar
Mango salsa:
- 3 mangoes rolled
- 1/3 Cup diced red onion
- 1/3 Cup chopped fresh coriander
- juice of 1/2 lime
Everything else:
- Butter lettuce or lettuce leaves of your choice
- 1 avocado cut
- Any other add-ins you want

Place all of the pulled chicken ingredients in the insert of your slow cooker. Blend to combine flavors, then set on high for 3 hours.
