About no yeast pizza dough

I have received many requests for a foolproof pizza dough recipe that requires no yeast. While dough is delicious with yeast, it can be a tricky ingredient – and as it turns out, it’s not necessary at all to make the perfect pizza!

After much experimentation with different combinations of flour, baking soda and powder, and other ingredients, I can confidently say I have discovered the right mix for the best pizza dough.

Nothing magical here, just common pantry staples in the right proportions, treated properly and with some patience.

A simple recipe

This recipe uses all-purpose flour. While I enjoy whole wheat for its health benefits (like this whole wheat pizza dough recipe with yeast), all-purpose flour is really the best option for a classic pizza flavor.

Unleavened whole-wheat pizza dough creates a denser and crunchier crust than a roti flatbread pizza. However, this no yeast all-purpose flour dough has a more traditional texture and taste.

The crust is crispy on the outside and slightly chewy on the inside. It’s sturdy enough to hold plenty of sauce, cheese and all your favorite pizza toppings.

In particular I would recommend making this pizza dough with unbleached all-purpose flour or organic flour. You can also use bread flour. But keep in mind that you may need to add some more water if using bread flour.

Although homemade pizza dough takes a while to prepare, I promise it’s worth the wait and really doesn’t take too much work.

Make it ahead of time when you get the chance and you’ll be so happy to have a ball of dough ready to bake whenever you have a pizza craving!

Step by step guide

How to Make No Yeast Pizza Dough

1. First, combine 3 cups all-purpose flour, ½ teaspoon salt, and ½ teaspoon sugar in a mixing bowl or pan.

2. Then add ½ teaspoon baking soda.

3. Add 1 teaspoon baking powder. Mix very well. This combination of baking soda and baking powder creates the perfect pizza dough rise without any yeast. So make sure they are fresh, active and within their shelf life.

4. Now add 2 tbsp olive oil. If you don’t have olive oil, use any neutral flavored oil.

5. Add 1 tablespoon of lemon juice or vinegar. A little acidity helps gluten develop.

6. Start by adding ½ cup of water in portions, as you mix the ingredients.

7. Use a spatula to mix the ingredients together into a sticky dough. You can also use a stand mixer to knead the dough.

8. Now use clean hands to knead the dough. Add water in portions while kneading the dough.

9. Continue kneading for at least 10 minutes until you have a soft, smooth pizza dough. Add another tablespoon or two of water if needed while grinding.

The amount of water you need to add depends on the quality of the flour.

10. The dough should be elastic and stretchy and no longer sticky. Test the pizza dough by stretching a portion very thin – it should stretch like an elastic and not break.

11. Pizza dough should be sticky, meaning that when you press into the dough it should go without sticking to your fingers.

If too sticky, dust lightly with flour and continue kneading for another minute.

12. Form the dough into a ball and rub the outside with olive oil. Cover the bowl with a towel and place on the counter for about 2 to 2.5 hours for the yeast to rise.

13. After the dough has risen for at least 2 hours, poke one of your fingers into the dough; Depression should be given away. Then you know it’s ready.

14. Knead the dough again for a minute or two before making the pizza.

Storing Pizza Dough

15. If not using immediately, wrap the dough tightly in cling film or aluminum foil and cover in an airtight container in the fridge.

It will stay good for up to 3 days. You can also freeze pizza dough for several months.

A note that this recipe only mentions making pizza dough. Once you have the dough and are ready, you can bake or grill the pizza in your oven or use a cast iron skillet for grilling.

First, depending on the size of your baking pan or tray, divide the dough. Preheat your oven to 230° C/445° F for 15 to 20 minutes.

Roll the divided dough into a neat ball. Dust the dough ball with some flour and lightly dust your work surface.

With a rolling pin, gently roll the dough about ⅛ to ¼ inch thick to match the size of your baking pan.

Grease or brush a baking pan or tray with a little olive oil as well. Place the rolled dough in the baking pan.

Brush the rolling dough with some olive oil on top. Add your favorite toppings, including your choice of cheese and some dried herbs or seasonings.

Bake at 230° C/445° F for 10 to 15 minutes or until the base is crisp or golden and the cheese has melted.

Helpful Tips

  • Try a cheese-less pizza that focuses only on rich sauces and veggie toppings for a completely vegan pizza party.
  • This recipe makes a medium-sized pizza crust that is enough to serve 6 pizzas. Easily double or triple the recipe as you want to make more pizzas to freeze.
  • I recommend using unbleached and organic all purpose flour. Bread flour also works well in this recipe. But when using bread flour you need to add a little more water while kneading the dough.
  • Remember to knead the dough very well. The dough should be smooth, pliable, soft and firm.
  • Make sure your baking soda and baking powder are past their shelf life and fresh.

  • Take all purpose flour, salt, sugar, baking soda and baking powder in a mixing bowl or pan.

  • Mix very well.

  • Add olive oil and lemon juice.

  • Add water in portions.

  • Start mixing and then knead the dough.

  • Keep stirring until you get a soft and smooth dough. Add water in portions. I added ½ cup + 2 tbsp water.

  • You are very well rubbed indeed. Knead for at least 10 to 12 minutes.

  • The dough should be elastic and stretchy. Take a part and expand it. The dough should not break.

  • Pizza dough should be sticky but not sticky.

  • Rub some olive oil over the whole dough and cover in a bowl. Let the dough rise for 2 to 2:30 hours.

  • Punch your fingers into the dough and let the depression go away.

  • Knead the dough lightly before using again. If not using immediately, wrap the dough tightly in cling film or aluminum foil or cover in an airtight container in the fridge.

  • You can also freeze pizza dough and it will stay good for months.

  • To bake a pizza, follow the usual process of combining the dough, portioning and rolling, topping the pizza, and then baking.

  • First preheat your oven to 230° C/445° F for 15 to 20 minutes. Combine pizza dough and top with your choice of toppings, cheese and herbs/spices.

  • Bake at 230° C/445° F for 10 to 15 minutes or until the base is crusty or golden and the cheese has melted.

  • Add more water if necessary while kneading the dough.
  • Add vinegar instead of lemon juice.
  • Any other neutral flavored oil can be used instead of olive oil.

  • Baking powder and baking soda cannot be substituted for each other. But they should be fresh and within their shelf life.
  • I recommend making pizza dough with bleached or organic all-purpose flour. You can also use bread flour. But a little more water should be added to the bread dough while kneading the dough.
