The Little Things Newsletter #361 – Live, Laugh, and Lots of Good Food!

Welcome to the weekend, my friends! It’s been a long (and delicious!) week of cooking and photographing new recipes to share with you. As a result, our fridge is full of great leftovers and I have absolutely no plans to cook for at least the next day or two.

There are also loads of new ice cream recipes in the works and that means our freezer is full too. (Hard life, isn’t it?) I’ve been sharing a new ice cream recipe every Friday for the past few months, and I don’t see that changing anytime soon. Making ice cream is just fun.

ON THE BLOGS this week: Start the weekend off with a stack of fluffy strawberry banana pancakes. They’re great on their own, hand nibbled, but they get even better with a little butter and syrup on top.

This easy mushroom spaghetti sauce trumps anything you can buy in jars or cans at the grocery store. After just a few minutes of hands-on exertion, you’ll be able to roam freely while this sauce simmers on its own while leaving your house smelling amazing.

The spaghetti sauce works well as a vegetarian or vegan dish if it is prepared without minced meat. For a low-carb twist, or just because it’s so delicious too, scoop the sauce over a bowl of roasted broccoli or sautéed cabbage strips.

When I first saw a recipe for microwave lemon curd, I was skeptical. I love lemon curd but am such a lazy person to make it. Now that I’ve tried this method, I may never make lemon curd on the stovetop again.

Fluffy, creamy, sweet and tangy lemon dip served with fresh berries, graham crackers or shortbread biscuits is an easy, summery dessert perfect for sharing with friends.

Fried rice with shrimp and sausage has officially entered our favorite food list. This easy recipe is a two-thumbs-up kid-approved hearty stir-fry; perfect for a quick and easy weeknight dinner!

With a bright berry flavor, a stunning red color, and a smooth, velvety texture, homemade strawberry sauce beats anything you can buy at the store.

Strawberry Cheesecake Ice Cream is a sweet and tangy combination of smooth, creamy cheesecake ice cream and fresh strawberry swirls.

Let’s get that out of the way before we dive into this amazing Cauliflower “Potato” Salad. This isn’t a “healthy” attempt to trick your brain into liking this low-carb potato salad recipe. This is a creamy, flavorful cauliflower salad that proudly stands on its own. If you like cauliflower at all, chances are you’ll fall in love with this summer side dish.

What I crave: These flavorful buttermilk fried chicken sandwiches caught my eye yesterday and have been craving them ever since. You look so good!

my favorite thing this week is my tide pen. I squirted some red sauce on a favorite white top a few days ago — and immediately questioned my sanity for wearing that white top somewhere near the kitchen. Luckily I had one of those pens in my pocket and was able to dab the stains before I tossed the shirt in the dirty laundry that night. When I washed the shirt a few days later? Zero stains.

I realize that Tide pens aren’t big news, but sometimes it really is the little things that make my days so much better.

What I watch: Society of Dead Poets. My boys and I saw this last weekend. Robin Williams, Ethan Hawke and Robert Sean Leonard made this classic what it is and it sparked a lot of conversations for us after seeing the film. Whenever I watch a film with Robin Williams, I put myself in a spiral where I watch all of his films. He brought so much joy to so many people.
