How to Make Hailey Bieber’s Skin Smoothie Without Expensive Superfoods
You can make a vegan version of Hailey Bieber’s strawberry shortcake recipe at home using simple plant-based ingredients instead of expensive superfoods.
In fact, you probably have most (or all) of them on hand right now!

What is Hailey Bieber’s Strawberry Skin Smoothie?
Basically, Hailey teamed up with Erewhon to create a new smoothie to coincide with the launch of her new skincare line Rhode. The pink and white smoothie is made with ingredients like collagen powder, liquid hyaluronic acid, and seaweed gel, and if you love TikTok as much as I do, you’ve probably seen TONS of Hailey’s fans Bieber heading to Erewhon Market in Los Angeles to try out the new Strawberry Skin Smoothie.
It’s been #trending for weeks now and judging by my recent trip to Tonic Bar, I’d say there’s no end in sight!
What’s in Erewhon’s Strawberry Glaze Skin Smoothie?
It starts with some typical smoothie ingredients like frozen strawberries, avocado, dates and almond milk.
Next come some ingredients that are meant to benefit the skin, hence the name “Skin Smoothie”. It’s a blend of vanilla collagen powder, edible hyaluronic acid and seaweed gel…which by the way brings the total for this smoothie to around $17.
Fans say it’s worth the price, but since their smoothie is made with animal-based ingredients, I set out to make a plant-based version at home. (for a fraction of the price!)

How to make Hailey Bieber’s vegan strawberry skin smoothie recipe
Ingredients
- strawberries – frozen are best for texture and because it makes the smoothie colder (which weirdly makes it taste 10x better!)
- Almond milk – Malk or Three sisters will be more like Hailey’s recipe type
- pumpkin seeds – instead of animal collagen powder, I have protein-packed (raw) pumpkin seeds. They are rich in amino acids like glycine and proline which can also be found in collagen supplements.
- Soft Tofu – Another great source of amino acids and a great sub for hyaluronic acid. The tofu also adds a protein boost and makes the smoothie a little more filling!
- avocado – Healthy fats are great for your skin and create a rich, creamy consistency in this smoothie!
- Medjool dates – rich in minerals and adds the perfect amount of natural sweetness.
- Vanilla extract – Hailey’s smoothie uses vanilla collagen powder, so the vanilla extract will double that flavor.
- Maple syrup – for flavor, natural sweetness and depth.
- Sal – a little salt helps bind the flavors together. Bonus points if you use an idolized salt that is one of the minerals found in Sea Moss Gel!
- Garnish the glass and add more flavor with coconut cream and strawberry puree (recipe below) You can also use naturally sweetened strawberry jam instead of puree.

Tips for making good smoothies at home
- Mix in a little more than you think you need! Don’t stop right after the ingredients have liquefied. Let it keep mixing for 30-40 seconds to whip/emulsify the smoothie to a thick, creamy consistency.
- Use frozen fruit and cold ingredients: This may seem obvious, but it really makes a big difference. A nice cold smoothie will be thicker and taste much better! Think cold ice cream or hot, runny, melty ice cream. One is much nicer than the other!
- Opt for Medjool dates – Medjool dates have such a great texture for smoothies!
- I love using this blender! It’s super powerful and takes up less counter space than typical blenders.

How to Make Hailey Bieber’s Skin Smoothie Without Expensive Superfoods
An inexpensive vegan version of Hailey Bieber’s strawberry shortcake smoothie made with frozen strawberries, avocado, dates, and almond milk.
- 1½ cups frozen strawberries
- ½ cup almond milk without sugar
- 2 spoon pumpkin seeds raw
- 1/8 blog soft tofu approximately 1.75 oz
- ¼ medium avocado
- 2 Medjool dating chopped
- ½ teaspoon vanilla extract
- 2 teaspoon maple syrup
- 1 pinch sea ​​salt
For the glass:
- coconut cream
- strawberry jam or strawberry puree recipe below
Strawberry puree:
- Simply combine 1 cup of strawberries and 1 tablespoon of sugar in a saucepan.
- Next, mix 1 tablespoon of cornstarch and 1 tablespoon of water and add to the pot with the strawberries.
- Cook over medium heat until bubbling, then reduce and simmer until the strawberries are soft and the juices have thickened.
- Remove from heat and add a squeeze of lemon juice. Then taste and add more sugar if needed.
- Mash with a fork or blend if desired and enjoy!
