If you’ve never had avocado fries before, let this be a sign that you need to change that immediately.

Because they are excellent.

I first had avocado fries at a blogging retreat in Utah in 2016. A bunch of us food bloggers went to an incredible multi-course dinner and one of the appetizers was an elaborately styled plate of avocado fries. There were a few opportunities to dip if I remember, but that was about 6 years ago and I can’t say for sure. Ever since then, though, I’ve been thinking about her.

To prepare these avocado fries you will need:

  • eggs – Acts as a sticky glue for the flour and breadcrumbs.
  • unbleached all-purpose flour – Locks in moisture when air frying.
  • Panko bread crumbs (Japanese breadcrumbs) – Is the outer coating that adds texture and flavor. Use homemade or store-bought.
  • garlic powder – Adds flavor that’s sweeter yet milder than fresh garlic.
  • fine salt – Enhances the flavor of the breadcrumbs.
  • paprika – Adds color and subtle flavor.
  • avocados – Choose ripe, slightly firm and not too soft avocados.
  • southwestern ranch – Great for dipping!

Beat eggs in a bowl

Prepare the ingredients for the breading:

Beat two eggs in a shallow bowl.

Grab a whisk or fork and beat well until well combined.

In a separate bowl, measure and add 1/3 cup unbleached all-purpose flour.

And finally, in a third shallow bowl, measure and add 1 cup panko with 1/2 teaspoon garlic powder and fine salt and 1/4 teaspoon paprika.

Cut 3 medium to small avocados into eighths and remove the skin and set up your breading station.

  • 2 large eggs
  • 1/3 Cup unbleached all-purpose flour
  • 1 Cup Panko Japanese breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon paprika
  • 3 small to medium avocados, ripe but still slightly firm
