  2. Next, add your dry ingredients into a medium bowl.
  3. Then in another bowl add your wet ingredients and mix until fully incorporated.
  4. Then slowly add the flour mixture to the wet ingredients.

It is important to use ripe bananas for this cake. You want brown spotted bananas for this. If they are not ripe you can put the banana in the peel at 225 degrees for 15 minutes or so. You want the skin to turn black. Once it does, remove and let the bananas cool. Then mix the dough as usual. It will give you a ripe banana flavor.

Room temperature vegan cream cheese

Make sure your vegan cream cheese is softened to room temperature. This way you can get that ultra creamy frosting texture.

Stand mixer or hand mixer

I love using a stand mixer to make the cake batter and frosting. I find that especially when making frosting it helps give you that ultra creamy texture.

Stir ⅓ cup of coconut flakes into the frosting to add a nice hint of coconut flavor to the cake.

  • Make the cake by mixing the flour, cinnamon, baking powder, baking soda, salt and set aside.
