If you’ve ever had boursin cheese, you’ll probably love it as much as I do—it’s a beautifully garlicky cheese that’s simultaneously crumbly and creamy and intensely flavorful. And since almost nothing beats cheesy pasta, that’s what I decided to make Baked Boursin Pasta With spinach and mushrooms – all cooked in one pan!

You may have seen baked pasta recipes on TikTok, with all the ingredients – including uncooked pasta! – is added to a baking dish, and cooked at once. My own baked feta mac and cheese follows the same method, as does this baked boursin pasta!
This time, the pasta is combined with fresh spinach and mushrooms and topped with a whole round of Boursin cheese. Then, you stick it in the oven until the pasta is cooked and the cheese is crisp and golden brown.
Mix it all together to make the most incredible creamy, cheesy, garlicky baked pasta you’ll ever have. It really couldn’t be easier!

- Boursin cheese. Different flavors are available, especially in the last few years, but this recipe uses real garlic and herbs. This is my favorite by a long way!
- macaroni. You can try using other pasta shapes, but I find a smaller shape, like macaroni, because it cooks faster than a larger type of pasta. Larger pasta may struggle to cook well using this method.
- fresh vegetables
- mushroom

👌 Top tip
If you want to swap out the spinach and mushrooms for different vegetables, make sure you choose something that will bake nicely while the pasta cooks. Tomatoes, asparagus, sweetcorn, chopped peppers, etc. will all work nicely. I would avoid anything particularly hard, like carrots, which need to be cooked longer.

Step 1: Add spinach and mushrooms to a baking dish.

Step 2: Add some minced garlic, and spread the macaroni on top. Pour over the milk, soaking the pasta as much as possible in the milk.

Step 3: Top with a whole round of Boursin cheese, and sprinkle with some black pepper.

Step 4: Bake until the boursin is nice and crispy and the pasta is cooked.

Step 5: Break up the boursin and mix everything together well to make a creamy, garlicky sauce.

💭 Recipe FAQs
Boursin is a French cream cheese, although it has a slightly more crumbly texture than a typical cream cheese. It is flavored with garlic and herbs, and it melts to create a smooth sauce. It’s also a great spread on crackers or bread.
If you leave uncooked pasta in milk for a long time, it is likely to get soggy. Therefore, I would recommend either waiting to assemble this dish until you are ready to bake it, or cooking the recipe completely and then reheating when you are ready to serve. Leftovers can be stored in the refrigerator for up to 3 days.
The microwave is the best way to reheat pasta dishes, as it means they stay moist. You can reheat in the oven if needed, but this may dry out the dish a bit.
Pasta bakes freeze really nicely – just transfer any leftovers to a freezer-safe container. Reheating works best if you allow the dish to thaw beforehand.

Preheat the oven to 190°C (gas mark 5 / 375°F).

Spread fresh spinach in a baking dish – mine measures about 8 x 8 inches, but slightly larger will do. Top with diced mushrooms, minced garlic and cooked macaroni.

Pour over the milk, using a fork to dip the pasta through the spinach as much as possible. You can add additional water if necessary, until the pasta is almost covered.

Place a whole round of boursin cheese on top and sprinkle some black pepper.

Bake for about 45 minutes, or until the pasta is cooked to your liking. Half way through cooking, you need to pour the pasta back into the liquid, so that it is fully cooked. If the cheese starts to get crispier than you like, cover the dish with a lid or some kitchen foil.

Once the cheese is crispy and the pasta is fully cooked, mix everything together well and serve.
