People can be very particular about their chicken salad and egg salad recipes. Celery vs onions, include dill pickle relish, olives or no olives. The arguments continue. I think there’s room for all the recipes, and it can be fun to change up depending on your mood!
This Curried Chicken Salad is super easy and uses just a little curry powder in the dressing to take it to a whole other level with tons of flavor!

- Get a fried chicken at the store and you can have it ready in 10 minutes. So easy to make and great for any leftover or already cooked chicken you have!
- You can mix the ingredients. I’ve added celery and cashews, but raisins are a very common addition when you want that touch of sweetness. Don’t like cashews, use almonds. Many possibilities.
- Make a large batch over the weekend and you’ll have a couple of days’ preparation done. With crackers, bread, salad to work or school – super versatile!

I like the mix of mayonnaise and sour cream for this, but it definitely works Use all mayonnaise if you prefer. Or Yoghurt as a substitute is a great idea.

How to Make Curried Chicken Salad
- Make the dressing. Mix together the mayo, sour cream, honey, curry powder, garlic and onion powder, and salt and pepper. Once well mixed, feel free to taste and add more curry powder to taste.
- In a large bowl, combine shredded chicken, celery, chopped parsley, and cashews
- Pour the dressing over the chicken mixture and mix until well coated.
- Store in the refrigerator until ready to use.

How to serve curried chicken salad
The thing about chicken salad is that you can really enjoy it however you want!
- bread rolls – Hamburger/hot dog buns work great. The Kaiser rolls and other bakery rolls also go well.
- croissant – A butter flake croissant goes so well with chicken salad.
- Wrap – Put it in your favorite tortilla or wrap and fold.
- salad – Keep things low carb and healthier by serving them on a bed of fresh spinach, mixed leafy greens, or your favorite salad.
- filled tomatoes – In the summer when the tomatoes are super fresh, hollowing out the insides of the tomatoes and stuffing them with chicken salad is a great idea for a buffet or to feed a crowd.
- cracker – my family loves to enjoy it almost as a dip and serve it on whole wheat crackers.
- bread – get some savory or good bread and serve it on toasted bread for a delicious sandwich.

How long does chicken salad last
storage – If you make it, you can keep it in the fridge for up to 3 days in an airtight container. So it’s great to have on hand for lunch during the week.
have a picnic? If you serve it at a potluck or take it to a picnic where it sits outside in hot weather, it will last for about an hour. at room temperature for two hours it will be fine. Whenever it comes to mayonnaise, it’s important to keep track of the time.
That’s something you ideally do don’t want to freeze. Technically it works, and I’ve done it before. But the texture changes when you freeze the mayo and sour cream. They may break down and become watery on thawing.
