Quick breakfasts, slightly upgraded from the standard, are one of my favorite recipe categories that I’ve mastered over my years of cooking. I recently cooked these quickly Breakfast tostadas for me and my wife.
I’ll say I usually do these on the weekends, but there’s no reason for that. They’re fast enough to be made on a weekday with no problems.
They are a great way to start the day! I’ll admit my kids aren’t really into it and just prefer oatmeal or yogurt with toast, but for 10-15 minutes of work I find them the perfect breakfast.
How to make the tostada clam
Making tostadas is not difficult at all and only takes a few minutes. I put a good dash of oil in a pan (the same one I’m going to use to cook the eggs later). Place skillet over medium-high heat and add corn tortilla once hot.
The tortilla will puff up a little as it begins to cook and you should poke a few holes in it with a fork to allow steam to escape. A flat tortilla cooks more evenly!
After a minute or two of frying you can flip it and after another minute or two you can drain this tostada on some paper towels. Nice and crispy!
If you were going to use a flour tortilla for this, you can be extremely careful. Flour tortillas fry much faster and tend to burn in the oil, so be careful. Also, I find that the flour tortillas get mushy if they sit too long after cooking.
I generally prefer corn tortillas, but I’ve used flour tortillas in a pinch and it works!
What to use as tostada toppings for breakfast
Basically, I recommend some mashed avocado and crumbled queso fresco or cotija cheese, but don’t let that stop you from experimenting! Here are some other ideas:
- Leftover taco filling
- Black beans
- Red onions
- Diced tomatoes
- Refreshed Beans
- Crumbled crispy bacon or boiled sausage
- Salsa or hot sauce
Boil eggs sunny side up
You better think I’ll put a perfect egg, sunny side up, on my breakfast tada. I just use the same pan I used to make the tostadas, crack in a few eggs, and once the egg whites are mostly set, I cover the pan for about 30 seconds to quickly steam the egg.
BOOM! Breakfast tostada perfection.
Layer and garnish the tostada
Once you’ve cooked your eggs your tortilla should be drained of any oil and you’re ready to assemble it.
Place the tortilla on a plate and add some mashed avocado and a pinch of salt, pepper, and chilli powder (optional).
Of course, the topping of breakfast toasties is very important. I like a sprinkling of fresh cilantro and a dash of hot sauce.

Dipping is a really good thing. To be honest, one of these tostadas is quite a large portion, but I usually can’t help but eat two of them.

My Fast Breakfast Tostada recipe
Breakfast tostada with eggs
One of my favorite breakfast recipes under 10 minutes! This quick breakfast tada is a delicious way to start the day and is always a hit with Tex-Mex lovers! Don’t forget the egg and hot sauce!
- 2 small corn tortillas
- 2 tablespoon vegetable oil
- ½ ripe avocado
- ¼ Cup crumbled cotija cheese
- 2 Big Eggs fried
- Fresh coriander
- Hot sauce

Put oil in a small pan over medium heat. Once simmering hot, add a corn tortilla and poke a few holes in the tortilla with a fork as it puffs up from the heat to flatten it out. Fry for 1-2 minutes per side until crispy. Remove tortilla and drain on one tortilla while the other cooks.

When the tortillas are done, add two eggs to the pan. When the pan is dry, add a fresh splash of oil. Fry the eggs, without turning, until the egg whites are mostly set, about 2 minutes. Then cover the pan and let it steam for 30 seconds to set the whites but leave the yolks runny.

To serve tortillas, mash half an avocado and spread on crunchy tortillas. Sprinkle generously with Cotija cheese. Top each tortilla with eggs and garnish with fresh cilantro and hot sauce. Serve immediately!
