This Beef Tips with Gravy is a meal my family absolutely loves. I do it at least once a week and they never get tired. It is precious, full of flavorand easy to prepare.
Tender beef simmered in a deliciously rich gravy is the perfect, flavorful and filling meal for those rushed weekday meals.
It is rich, spicyand creamy! Absolutely irresistible, especially when served over a pile of mashed potatoes.

Ingredients you need, substitutions and notes

- Beef: I recommend using “Stew Meat” or “Beef Tips”. If you can’t find it in the prepackaged department, ask your butcher about diced tenderloin or roast beef, which are less expensive.
- Oil: Olive, vegetable or canola oil are suitable for this recipe.
- Spices and herbs: You will need onion powder, garlic powder, dried oregano, dried thyme, bay leaf, salt, and black pepper.
- Wine: I recommend using a good red wine. If you don’t want to use wine, you can substitute beef broth.
- Worcester sauce: For extra flavor!

- Fry the diced meat.
- Season with herbs and spices.
- Add wine and Worcestershire sauce and reduce.
- Add water, beef stock, tomato paste and bay leaf.
- Cook under pressure for 30 minutes.
- Add the cornstarch slurry to thicken the sauce.

LOAD: Cooked beef tips can be stored in the refrigerator for up to 3 days.
FREEZE: Let the beef cool completely. Place in a freezer-friendly container or bag. Frozen up to 2 months. Thaw the beef in the refrigerator, then reheat it on the stove.

Pat the beef cubes dry with kitchen paper and trim off excess fat if necessary.

Turn on the Instant Pot and select “Sauté” mode and set for more. When hot, add the oil. In batches, sear the beef in individual layers for 3 to 5 minutes, browning on all sides.

Add onion powder, garlic powder, oregano, thyme, salt and pepper; mix to combine.

Add the wine and Worcestershire sauce; Deglaze the pot with a flat-headed wooden utensil to scrape any stuck bits of beef from the bottom of the pot. Let the wine reduce for 5 minutes. Add water and beef broth, tomato paste and bay leaf; mix to combine. Secure the lid and close the pressure relief valve.

Select meat/stew and set the time to 30 minutes. After the time is up, release the pressure on its own for 5 minutes. Then carefully turn the valve to “vent” to release any excess pressure that may still be present. Then remove the lid. Press “Cancel”.

Remove and discard bay leaf.

Mix the cornstarch and water until well combined and there are no lumps.

Select the “sauté” mode and set it to normal. Add the cornstarch mixture. Simmer for 2-3 minutes or until sauce thickens.
